COMPRENDE: A) REDUCIR LA PRESION DEL AIRE EN EL INTERIOR DE UN RECINTO DE VACIO HERMETICAMENTE CERRADO, DONDE SE ENCUENTRAN LOS CHAMPIÑONES; B) IMPREGNAR LOS CHAMPIÑONES CON UN LIQUIDO QUE ESTABLECE EN EL RECINTO UNA PRESION IGUAL A LA ATMOSFERICA; Y C) BLANQUEAR LOS CHAMPIÑONES ENCERRANDOLOS EN UN BLANQUEADOR CONTENIENDO AGUA A TEMPERATURA ELEVADA DURANTE UN TIEMPO DETERMINADO. EL LIQUIDO DE IMPREGNACION ESTA CONSTITUIDO POR AGUA Y MATERIA AMILACEA, TAL COMO ALMIDON.SE UTILIZA PARA BLANQUEAR CHAMPIÑONES PARA SU CONSERVACION.
