CONSISTE EN PONER EN CONTACTO EL POLISACARIDO A UN PH ENTRE 4,5 Y 8 CON UNA ENZIMA QUE PROCEDE DE BACILLUS MEGATERIUM NCIB N.O 11568 Y QUE PRESENTA ACTIVIDAD ALFA-AMILASA, DONDE EL POLISACARIDO EMPLEADO ES ALMIDON, UN HIDROLIZADO PARCIAL DE ALMIDON, PULULANO O UNA CICLODEXTRINA, EMPLEANDOSE LA ENZIMA DEL BACILLUS MEGATERIUM JUNTO CON GLUCOAMILASA EN LA PRODUCCION DE UN JARABE DE DEXTROSA A PARTIR DE ALMIDON O UN HIDROLIZADO DE ALMIDON. LA TEMPERATURA DE REACCION ESTA COMPRENDIDA ENTRE 40 Y 60JC, SIENDO EL HIDROLIZADO DE ALMIDON UNA MALTODEXTRINA QUE CONTIENE DE 20 A 40% EN PESO DE SOLIDOS DISUELTOS.
