Abstract

Procedimiento de obtención de un polvo de zumo de frutas, caracterizado porque comprende las etapas de: (a) homogenizar un hidrolizado de almidón que es fácilmente soluble en agua fría y que tiene un DE de 2 a 5 y un contenido en amilopectina de 95% o más, con un zumo de fruta, añadido de tal modo que la cantidad de zumo de fruta sólido deshidratado sea de 5 a 95% en peso, basado en el peso del zumo de fruta final; y (b) secar la mezcla resultante.
