Abstract

An improved method for preparing a textured protein concentrate from an extracted protein material containing water soluble constituents, by extracting with an aqueous solvent of said water soluble constituents from said extruded material, wherein the improvement comprises that said extruded protein material has a density of between about 85 and 150 grams per liter, with respect to the weight of dry material, and the extraction is carried out at a pH of between about 5.5 and 6.0, whereby produces a textured protein concentrate that has an improved meat-like texture and a smooth flavor.
