Mejoras introducidas en la solicitud de patente de invención P201231708 Proceso de fermentación de mosto, y cuba de fermentación.#Permiten incrementar sustancialmente la eficiencia del proceso de fermentación, optimizando las fases de remojado y mezclado, para una rotura completa del sombrero formado en la parte superior de la cuba, maximizando así la transferencia entre la capa de hollejos (3) y el mosto.
