Abstract
Un proceso para la preparación de queso cremoso que comprende, en este orden, las etapas de: (i) ajustar un concentrado de proteína de leche a un pH de 4,1 a 5,4, (ii) opcionalmente, calentar el concentrado de proteína de leche, y (iii) homogeneizar el concentrado de proteína de leche a una presión de 50 MPa (500 bar) o superior y a una temperatura no superior a 40 °C, en el que la relac ión entre proteína de suero/caseína es inferior a 1/1.
