Abstract

Composición y procedimiento de elaboración industrial de pasta sin gluten en hojas.#La presente invención se refiere a una composición que comprende entre 40-50% de harina de arroz vaporizado (blanco o integral), 0.6-1% de sal, 30-40% de agua a una temperatura comprendida entre 70-100°C, 0.1-0.3% de hidrocoloide, 2.5-6-60% de proteína láctea, vegetal o de huevo y a un procedimiento para la elaboración industrial de hojas de pastas sin gluten, que permite su fabricación industrial en láminas de varios metros de longitud y anchura de más de 50 cm, con espesores de lámina de entre 1 y 2 milímetros.
