Abstract

Procedimiento combinado para optimizar el procesado mínimo industrial en fresco de arilos de granada que se caracteriza porque tras extraer y enjuagar los arilos, se escurren, se someten a un choque térmico con vapor de agua para protegerlos contra ataques microbianos, desórdenes fisiológicos y pérdida de valor nutritivo, y se envasan en un polímero plástico para facilitar su comercialización y consumo íntegro.
