Herramienta para precortar la carne de lomo en canales que son conducidas en una línea de matadero suspendidas de perchas o ganchos, en donde se ha cortado y abierto el abdomen y el pecho, se han dividido los jamones, y se ha soltado el tocino de jamón, en relación con la evisceración de las canales, caracterizada porque la herramienta comprende una cuchilla (31) con una hoja perfilada (40).
