Abstract

Procedimiento para la extracción de gluten en alimentos procesados y no procesados por calor, compatible con Elisa, composición y kits que comprenden dicha composición. El procedimiento comprende extraer el gluten contenido en dicha muestra con una solución acuosa de etanol en presencia de una composición que comprende un agente reductor de grupos disulfuro y un agente disociante, en un tampón de pH comprendido entre 7 y 8. El procedimiento permite extraer cuantitativamente el gluten contenido en una muestra de un alimento, tanto procesado por calor como no procesado por calor, como paso previo a la cuantificación por Elisa del gluten. De aplicación en el análisis de alimentos, en particular, de los alimentos destinados; a los enfermos celiacos.
