Abstract
Formulación mejorada de masas cárnicas bajas en colesterol, a base de productos cárnicos de cualquier tipo que, presentando la siguiente composición: Humedad: 48 - 80% Proteína: 12 - 16% Grasa: 4 - 36% expresada en % en peso respecto del peso total de masa cárnica, donde la grasa presenta unos contenidos equivalentes de ácidos grasos saturados, de ácidos grasos monoinsaturados, y de ácidos grasos poliinsaturados del 12% - 16%, el 70''5% - 81%, y el 6% - 8% en peso respecto del peso total de grasa, respectivamente.
