El aparato consiste en un pistón (1), tubular, desplazable axial y ajustadamente en el interior de un tubo de ensayo (2), en el que previamente se ha introducido la muestra de aceituna, con sus componentes residuo seco (3), alpechín (4) y aceite (5) debidamente separados, por centrifugación, prolongándose el citado pistón tubular (1) en un tubo transparente (7), de diámetro considerablemente menor y de considerable longitud, dotado de una escala graduada (8), en mililitros y décimas de mililitro, de manera que desplazando el pistón (1) en el seno del tubo (2) hasta que la zona de unión entre el alpechín (4) y el aceite (5) se sitúa a nivel del punto "0" de la escala graduada (8), es factible la lectura directa de la cantidad de aceite en mililitros y décimas de mililitro, sobre dicha escala (8) , para su traslado a una tabla que permite la obtención directa de su equivalente porcentual para una muestra de masa de aceituna preestablecida.Apparatus for determining the performance of the olive oil and by-products and method of use of said apparatus.
