Abstract

Método y dispositivo para embutir materias cárnicas cerradas por grapado. Las materias cárnicas acondicionadas, antes de su introducción en una manga sin fin (4) con un primer extremo cerrado y ulterior estrangulamiento-cierre de la materia embutida a intervalos regulares por unas grapas, espaciadas, para producir una tira de elementos embutidos, se someten previamente a una etapa de corte a intervalos regulares del flujo continuo de materia cárnica a embutir en la manga (4), coincidiendo dichos cortes con las posteriores zonas de estrangulamiento. El dispositivo para aplicar el procedimiento comprende una zona de embutición (3) con un flujo continuo de materias cárnicas, desde una máquina embutidora (1) por un tubo de salida (2) introducido en una manga (4), con un primer extremo previamente cerrado, e incluye entre dicho tubo de salida (2) de la máquina embutidora (1) y dicha zona de embutición (3), un conjunto de guillotina (8) apto para producir un corte transversal de la materia cárnica.
