Abstract

Procedimiento de fabricación de centros de paleta curados, que comprende una etapa de salazón de la paleta mediante aplicación de una mezcla de sal y sales de curado y posterior recubrimiento con sal común; una etapa de post-salado en la que la paleta se mantiene a bajas temperaturas del orden de los 4ºC y a una humedad relativa comprendida entre 60% y 90%; y una etapa de secado, en la que la paleta se mantiene a una temperatura substancialmente comprendida entre 10º y 35ºC y a una humedad relativa también substancialmente comprendida entre 60% y 90%; con anterioridad a la etapa de salazón, existe una etapa de deshuesado de la paleta, la cual, posteriormente es sometida a un prensado.
