Abstract

SE PRESENTA UN METODO Y UN APARATO PARA EL TRATAMIENTO DE FLUIDOS, PARTICULARMENTE VINO, PARA ELIMINAR LAS SUBSTANCIAS NO DESEADAS. EL VINO SE TRATA PRIMERO EN UNA UNIDAD DE TRATAMIENTO DE OSMOSIS INVERSA, GENERANDO UNA PARTE QUE QUEDA RETENIDA Y UNA PARTE QUE HA PENETRADO A TRAVES DE LA MISMA. LA MEMBRANA PARA LA UNIDAD DE OSMOSIS INVERSA SE SELECCIONA PARA HACER PASAR EN LA PARTE QUE HA PENETRADO LAS SUBSTANCIAS NO DESEADAS, QUE EN EL CASO DEL VINO PUEDE SER UN COMPUESTO ACIDO VOLATIL (ACETATO DE ETIL Y ACIDO ACETICO). LA PARTE QUE HA PENETRADO SE EXPONE ENTONCES A UNA COLUMNA DE TRATAMIENTO. EN EL CASO DE SUBSTANCIAS ACIDAS VOLATILES, ESTA SERA UNA COLUMNA DE INTERCAMBIO DE ANIONES, QUE ELIMINA EL ACIDO ACETICO DE LA PARTE QUE HA PENETRADO MEDIANTE INTERCAMBIO DE ANIONES Y ELIMINA EL ACETATO DE ETIL MEDIANTE HIDROLISIS DE BASE. ESTO PRODUCE UNA PARTE PURIFICADA, QUE NO CONTIENE ELEMENTOS ACIDOS VOLATILES PERO QUE CONTIENE OTROS COMPONENTES DESEABLES PARA EL VINO. LA SUBSTANCIA PURIFICADASE RECOMBINA ENTONCES CON LA PARTE QUE HA QUEDADO RETENIDA DE LA COLUMNA DE OSMOSIS INVERSA, Y EL RESULTADO ES VINO EN EL QUE SE HAN ELIMINADO LOS ELEMENTOS ACIDOS VOLATILES Y POCO MAS. ESTE VINO PUEDE HACERSE RECIRCULAR A TRAVES DEL SISTEMA PARA ELIMINAR AUN MAS ELEMENTOS ACIDOS VOLATILES. EL METODO TAMBIEN PUEDE APLICARSE A LA ELIMINACION DE ACETALDEHIDO, EN CUYO CASO SE UTILIZA UNA COLUMNA DE DESTILACION EN VEZ DE UNA COLUMNA DE INTERCAMBIO DE ANIONES Y EL RESIDUO DE LA DESTILACION CONSTITUYE LA SUBSTANCIA PURIFICADA QUE SE RECOMBINA CON LA PARTE QUE HA QUEDADO RETENIDA DE LA COLUMNA DE OSMOSIS INVERSA.
