Abstract

Process consisting in the production of a mixture of pre- prepared ham and cheese in a proportion of 83.3% ham and 16.7% cheese, these products being kneaded for 10-15 minutes in a sealed enclosure from which the air is extracted by means of a vacuum pump up to 70-76 degree cm Hg and then the mass is packed tightly into moulds or bags, the packed pieces then being cooked at a temperature of 70- 80 degree C until a temperature of 74 degree C is achieved inside the pieces which are then cooled in water down to 20 degree C, finally undergoing chilling at 2 degree C for at least 48 hours.
