Abstract

Two layers of starch-contg. material which have a limited affinity one for the other are shaped to form an uncooked food article with the interface between the adjacent layers at the extremities of the food article sealed together. The article is cooked so that steam, generated within the food article during cooking, forces the adjacent layers apart at a point remote from the extremities of the food article, while retaining contact between the layers at the extremities. - Starch contg. material can be vegetable or cereal granules, flakes or starches, partic. potato granules flakes or starches, with optional emulsifiers and other common additives which may have undergone at least partial retrogration prior to formation into the layered material. The article is cooked in oil at 160 to 200 deg. C for 10 to 300 secs.
