Abstract
Die Erfindung betrifft ein Verfahren zum Behandeln von Gargut (12) in einem Garraum (12) eines Gargeräts (1), in den von einem Hochfrequenzerzeuger (2) erzeugte Hochfrequenzstrahlung über mindestens eine Abstrahleinrichtung (21) eingebracht wird, wobei die Hochfrequenzstrahlung in mindestens einem ihrer Strahlungsparameter Frequenz oder Phase veränderbar ist. Die Erfindung betrifft ein Verfahren zum Behandeln von Gargut in einem Garraum eines Gargeräts, in den von mindestens einem Hochfrequenzerzeuger erzeugte Hochfrequenzstrahlung über mindestens eine Abstrahleinrichtung eingebracht wird, wobei die Hochfrequenzstrahlung in mindestens einem ihrer Strahlungsparameter Frequenz oder Phase veränderbar ist. Gargeräte mit einem Garraum, in welchem Gargut mittels Hochfrequenzstrahlung, insbesondere mittels Mikrowellen erhitzt werden kann, sind bekannt. Bei konventionellen Mikrowellengeräten hat sich weitgehend eine Frequenz im ISM Band von 2,4 bis 2,5 GHz durchgesetzt, entsprechend einer Wellenlänge von ca. 12 cm. In manchen Ländern wie den Vereinigten Staaten kommt für industrielle Mikrowellenherde auch eine Frequenz im ISM Band von 902 bis 928 MHz zum Einsatz. Darüber hinaus sind Mikrowellengeräte bekannt (
Beim normalen Erhitzen von Gargut mit Mikrowellen werden Temperaturen, wie sie für Bräunungsreaktionen (Maillard-Reaktion) von Speisen nötig sind, nicht erreicht. Dadurch können die vom Rösten bekannten Röstaromastoffe nicht gebildet werden. Zur Erzielung einer Bräunungsreaktion werden deshalb in bekannte Mikrowellengeräte zusätzliche Strahlungsheizkörper eingebaut. Diese behindern einerseits das Mikrowellenfeld, andererseits müssen aufwändige Maßnahmen getroffen werden, um das Austreten von Mikrowellen im Befestigungs- und Verkabelungsbereich der Heizkörper zu verhindern. Außerdem besteht ein Nachteil bei diesen Heizkörpern darin, dass sie neben dem Gargut auch den Garraum erhitzen und somit Energieverluste mit sich bringen. Zum Bräunen des Garguts in reinen Mirowellengeräten ist auch spezielles Bräunungsgeschirr bekannt geworden, welches Mikrowellen besonders gut absorbiert. Hierzu werden Keramiken verwendet, deren Material einen hohen Flüssigkeitsanteil aufweist und deshalb zusätzlich zum Gargut durch die Mikrowellen erhitzt wird. So wird der erste Hochfrequenzsuszeptor nicht oder nur sehr gering von der Frequenz angeregt, mittels welcher der zweite Hochfrequenzsuszeptor angeregt wird und so weiter. Während des Programmablaufs folgen mehrere Erhitzungszyklen aufeinander. Die Anzahl der Erhitzungszyklen bestimmt sich aus dem Wert für die gesamte Erhitzungsdauer. Letztere kann vom Benutzer vorgegeben werden, als Festwert für ein Automatikprogramm in der Gerätesteuerung abgelegt sein oder aus dem Resonanz- oder Absorptionsverhalten des Garguts ermittelt werden. Natürlich kann auch durch ergänzende Sensorik der Zustand des Garguts bestimmt werden. Die Erhitzungszyklen besitzen in vorteilhafter Weise eine festgelegte, konstante Dauer, die jeweils zwischen fünf Sekunden und einer Minute betragen kann, insbesondere jeweils zehn Sekunden. Es werden Mikrowellen mit einer Leistung im Bereich von einigen hundert Watt abgestrahlt. Den Erhitzungszyklen sind jeweils Messabschnitte vorgelagert, in denen das gesamte mögliche Frequenz- und Phasendifferenzspektrum abgestrahlt wird, d. h., im beschriebenen Ausführungsbeispiel ein Frequenzspektrum von 2,4 bis 2,5 GHz und ein Phasendifferenzspektrum von 0 bis 360°. Die Messabschnitte dauern jeweils nur einige Millisekunden und werden mit einer Leistung im einstelligen Wattbereich durchgeführt. Dabei werden die Frequenz-Phasendifferenz-Kombinationen ermittelt, in denen hohe Absorptionen erfolgen, und diese Bereiche den jeweiligen Suszeptoren 3 und dem Gargut 12 zugeordnet. Aufgrund der am Anfang des Absatzes beschriebenen Bestimmung der Bereiche für die Hochfrequenzsuszeptoren bei kaltem und leerem Garraum kann die Gerätesteuerung in den Messabschnitten durch statistische Verfahren und/ oder Plausibilitätsbetrachtungen die Frequenz-Phasendifferenz-Bereiche mit hoher Absorption auch bei einer "Verstimmung" durch eingebrachtes Gargut 12 und durch Erhitzung des Garraums "nachverfolgen". Außerdem können zusätzlich ermittelte Frequenz-Phasendifferenz-Bereiche mit hoher Absorption dem Gargut 12 zugeordnet werden. Für den Fall, dass eine solche mechatronische Anpassung des Suszeptoraufbaus nicht vorgenommen wird, besteht die Möglichkeit, mindestens einen Hochfrequenzsuszeptor mit mindestens einem Temperatursensor zu versehen.
