Abstract
Description
Die Erfindung betrifft ein Verfahren zum Schneiden eines Lebensmittelstrangs in Scheiben mit den folgenden Verfahrensschritten:
- a) Der Lebensmittelstrang wird auf eine ein rotierendes Messer aufweisende Schneideinrichtung zu vorgeschoben.
- b) Während des Vorschubs werden mittels der Schneideinrichtung von dem Lebensmittelstrang an einem in Vorschubrichtung vorderen Ende sukzessive Scheiben abgeschnitten.
- c) Abgeschnittene Scheiben werden zur Bildung einer Portion nach dem Abtrennen von dem Lebensmittelstrang auf mindestens eine quer zu der Vorschubrichtung sowie in Vorschubrichtung beweglichen Zwischenablage abgelegt, wobei eine gestapelte oder geschindelte Scheibenanordnung erzeugt wird.
- d) Eine Mehrzahl von Scheiben wird gemeinsam von der mindestens einen Zwischenablage auf eine Fördereinrichtung übergeben.

Die Zwischenablage 15 besitzt die Form einer Gabel und weist eine Vielzahl parallel und äquidistant zueinander angeordneter zinkenförmiger Tragelemente 16 und einen senkrecht zu den Tragelementen 16 verlaufenden und mit letzteren verbundenen Tragbalken 17 auf. Die Zwischenablage 15 ist in einem Auffangrahmen 18 gelagert und zwar so, dass sie senkrecht zu der Vorschubrichtung, das heißt parallel zu der Schneidebene 7 verschiebbar ist. Hierzu ist der Tragbalken 17 an beiden Längsenden in jeweils einer Linearführung 19 gelagert, die sich jeweils im Inneren einer Längsstrebe 20 des Auffangrahmens 18 befindet.
