Claims (10)

  1. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, umfassend wenigstens einen Träger (14) sowie einen Schneidblock (18), der oberhalb des Trägers (14) angeordnet ist, wobei der Schneidblock (18) wenigstens einen Satz (32) von in einer Schneidrichtung (D) ausgerichteten Messern (34) umfasst, dadurch gekennzeichnet, dass der Träger (14) Haltemittel (16) umfasst, auf die das zu schneidende Produkt (12) aufgelegt wird, und dass der Schneidblock (18) einen Satz (38) von Fingern (40) umfasst, die in der Richtung (D) ausgerichtet und zwischen den Messern (34) angeordnet sind, wobei die Messer (34) beabstandet sind und zwischen sich Zwischenräume (50) definieren, die die Finger (40), welche die Messern (34) von dem partiell geschnittenen Produkt (12) lösen, durchlaufen.
  2. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, nach Anspruch 1, dadurch gekennzeichnet, dass die Haltemittel (16) wenigstens eine Vertiefung (20) umfassen, die die Form einer Mulde (22) mit einem dem zu schneidenden Produkt (12) angepassten Profil annimmt, und dass die Wand (24) der Mulde (22) wenigstens einen Teil (23) des Volumens des zu schneidenden Produktes (12) umschließt.
  3. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, nach Anspruch 2, dadurch gekennzeichnet, dass die Vertiefung (20) wenigstens einen Stift (28) in der Mulde (22) umfasst.
  4. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, nach einem der Ansprüche 1 bis 3, dadurch gekennzeichnet, dass der Satz (32) von Messern (34) an einem Träger (36) angebracht ist, der zwischen einer Ruhestellung, die ermöglicht, das Produkt (12) bequem aufzulegen und von den Haltemitteln (16) bequem abzunehmen, sowie einer Endstellung zum partiellen Schneiden des Produktes (12), die den Weg des Satzes (32) von Messern (34) begrenzt, um das Produkt (12) lediglich über einen Teil seiner Höhe zu schneiden, beweglich ist.
  5. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, nach Anspruch 4, dadurch gekennzeichnet, dass in der Ruhestellung - wobei der Satz (38) von Fingern (40) in einer Höhe (H) von den Haltemitteln (16) positioniert ist und der Satz (32) von Messern (34) in einer Höhe (K) von den Haltemitteln (16) positioniert ist - die Höhe (K) der unteren Enden (46) der Messer (34) größer als die oder gleich der Höhe (H) der unteren Enden (41) der Finger (40) ist.
  6. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, nach einem der Ansprüche 1 bis 5, dadurch gekennzeichnet, dass der Satz (32) von Messern (34) an einem beweglichen Träger (36) angebracht ist, der über eine mechanische Vorrichtung (48) mit manueller oder automatisierter Betätigung angetrieben wird.
  7. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, nach einem der Ansprüche 1 bis 6, dadurch gekennzeichnet, dass der Satz (32) von Messern (34) mehrere parallele Messer in wenigstens einer Richtung (D2, D3) umfasst.
  8. Vorrichtung (10) zum partiellen Schneiden wenigstens eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, nach einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, dass - da die Schneidebene (D1) als eine zu der Schneidrichtung (D) senkrechte Ebene definiert ist - der Satz (32) von Messern (34) mehrere parallele Messer (34) umfasst, die in zwei Richtungen (D2, D3), welche in der Schneidebene (D1) im Wesentlichen senkrecht zueinander verlaufen, gekreuzt sind.
  9. Verfahren zur Zubereitung, insbesondere von Blüten von Gemüsen, Früchten oder anderen, das darin besteht, ein partielles Schneiden eines zu schneidenden Produktes (12), wie eines Gemüses, einer Frucht oder jedes anderen Lebensmittels, mit einer Vorrichtung (10) zum partiellen Schneiden durchzuführen, umfassend wenigstens einen Träger (14) sowie einen Schneidblock (18), der oberhalb des Trägers (14) angeordnet ist, wobei der Schneidblock (18) wenigstens einen Satz (32) von in einer Schneidrichtung (D) ausgerichteten Messern (34) umfasst, dadurch gekennzeichnet, dass der Träger (14) Haltemittel (16) umfasst, auf die das zu schneidende Produkt (12) aufgelegt wird, und dass der Schneidblock (18) einen Satz (38) von Fingern (40) umfasst, die in der Richtung (D) ausgerichtet und zwischen den Messern (34) angeordnet sind, wobei die Messer (34) beabstandet sind und zwischen sich Zwischenräume (50) definieren, die die Finger (40), welche die Messer (34) von dem partiell geschnittenen Produkt (12) lösen, durchlaufen.
  10. Verfahren zur Zubereitung, insbesondere von Blüten von Gemüsen, Früchten oder anderen, nach Anspruch 9, dadurch gekennzeichnet, dass es darin besteht, das partiell geschnittene Produkt (12), also nach dem Schneiden, in ein Eiswasserbad, insbesondere zwischen null und drei Grad, mit Zusätzen, wie Bicarbonat und Zitronensäure, zu tauchen, damit sich die geschnittenen Teile wie eine Blüte öffnen.
