Abstract

Die Erfindung betrifft ein neuartiges Weizenmehl, das ausgehend von einem normalen, mittels eines üblichen Walzenstuhl-Vermahlungsverfahrens gewonnenen Weizenmehl mit einem ebenfalls als Erfindung beanspruchten Verfahren so modifiziert wurde, dass es gegenüber dem Ausgangsmehl eine um mehr als 10 Prozentpunkte erhöhte Wasseraufnahme aufweist, wobei die Teigstabilität und die Teigerweichung des daraus hergestellten Teiges gegenüber den entsprechenden Werten des Teiges aus dem Ausgangsmehl nicht nennenswert negativ beeinflusst bzw. sogar verbessert werden. Durch Zerkleinerung in einer trockenen Rührwerkskugelmühle unter Eintrag von 20 bis 300 kWh Mahlenergie pro Tonne Ausgangsmehl bei einer Temperatur des Mehles von weniger als 60°C wird eine Erhöhung der Wasseraufnahmefähigkeit von mehr als 10 Prozentpunkten gegenüber dem Ausgangsmehl erreicht.
