Furthermore, the punch is provided with a support plate (24) which may move with respect to the body of the punch and is meant to rest on the cheese while cutting cheese (2), as well as incorporating on said support plate (24) a guide bushing (25) on which fits protective cap (21) of punch (19) during downwards motion of punch body (22).

Claims (5)
- Dispositif à couper le fromage incorporant une plate-forme (1) sur laquelle est disposé le fromage (2), et pourvu d'un arbre central (3) connecté à la plate-forme et essentiellement perpendiculaire à celle-ci, sur lequel est inséré le fromage (2), une fois perforé le long de sa ligne centrale, et caractérisé par une lame verticale (4) unie à un ergot inférieur (5) qui passe à travers la base de l'arbre central, lequel est pourvu sur sa partie supérieure d'un manche (6) pour simplifier le maniement et la rotation contrôlée de la lame (4) au sein d'un arc (7) qui s'étend depuis l'arbre central (3) jusqu'à la position d'une rainure circulaire (8) ménagée dans la plate-forme (1).
- Dispositif à couper le fromage selon la revendication 1 caractérisé en ce que l'arbre central (3) a une forme circulaire, celui-ci ayant un évidement rectangulaire (9) tout le long de sa longueur verticale, dans lequel est logée la lame verticale (4) et il est pourvu d'un anneau de sûreté (10) à son extrémité supérieure qui entoure l'arbre central (3) en évitant que la lame (4) tombe et il est pourvu d'une ouverture (11), qui lorsqu'elle est disposée en regard de l'évidement rectangulaire (9), permet que la lame (4) se déplace pour couper le fromage (2).
- Dispositif à couper le fromage selon les revendications antérieures caractérisé en ce que l'arbre central (3) repose sur une douille inférieure (12) insérée au centre de la plate-forme (1) et il est également pourvu d'un ergot fileté inférieur (13) qui s'étend au-delà de la douille (12) et d'une plaquette (14) qui est disposée contre la face inférieure de la plate-forme (1), avec un écrou à oreilles (15) inséré sur l'ergot fileté (13) pour assurer la position verticale de l'arbre central (3).
- Dispositif à couper le fromage selon la revendication 1 caractérisé en ce que la plate-forme (1) est pourvue d'un secteur amovible (16) pour un traitement postérieur de la portion coupée de fromage, et d'un secteur amovible (17) pourvu d'un évidement interne (18) destiné à loger un poinçon (19) utilisé pour perforer le fromage (2) en son centre.
- Dispositif à couper le fromage selon la revendication 4 caractérisé en ce que le poinçon (19) est pourvu d'un manche (20) et d'une coiffe de protection (21) juste en dessous de celui-ci, depuis laquelle s'étend un corps allongé (22) du poinçon, qui termine au fond en une pointe quasi-rhomboïdale (23). Le poinçon est également pourvu d'une plaque de support (24) qui peut se déplacer par rapport au corps du poinçon et qui est destinée à reposer sur le fromage lorsque l'on coupe le fromage (2), en incorporant également sur ladite plaque de support (24) un manchon de guidage (25) sur lequel est montée la coiffe de protection (21) du poinçon (19) pendant le mouvement descendant du corps de poinçon (22).
