Definitions
- the invention relates to an oven for the heat treatment of food, with a heatable oven space and with a cleaning device for cleaning the oven space with a cleaning agent.
- the invention further relates to a method for cleaning an oven chamber of an oven for the heat treatment of foodstuffs, in which a cleaning agent is introduced into the oven chamber.
- the furnace space is cleaned by means of a liquid detergent, by applying the detergent to the bottom of the furnace space and then heating the furnace space to heat the detergent and finally to evaporate it at a temperature between about 50 to 70 ° C.
- the evaporated cleaning agent is intended to loosen contaminants on the side walls and the ceiling of the furnace chamber and is then removed manually after the furnace has cooled down.
- the object of the invention is therefore to provide an improved oven for the heat treatment of food and an improved method for cleaning an oven space, in which the above disadvantages are avoided.
- the best possible cleaning effect should be achieved and an automatic cleaning process should also be made possible.
- the cleaning device has a spray nozzle for spraying the cleaning agent in the furnace chamber.
- the object of the invention is achieved in that the cleaning agent is sprayed in the furnace chamber in a method according to the type mentioned at the outset.
- the object of the invention is completely achieved in this way, since spraying the cleaning agent in the oven space can achieve a particularly uniform distribution of the cleaning agent on the surfaces to be cleaned, and at the same time, depending on the configuration of the spray nozzle, nebulization or foaming of the cleaning agent can be achieved to improve the cleaning effect.
- this version is also particularly suitable for automatic operation.
- the oven has a blower and the spray nozzle is arranged in the suction area or in the pressure area of the blower.
- the blower is preferably designed as a radial blower, which is arranged behind a rear partition of the furnace chamber in a separate blower chamber and draws in from the rear wall of the furnace chamber via a central suction nozzle.
- the cleaning liquid is preferably sprayed in the area of the suction side of the fan while the fan is running, the cleaning liquid is at least partially blown by the fan sucked in and then evenly distributed by the blower in the furnace chamber and also in the blower room behind. This results in a constant swirling and a constant transport of the cleaning agent, so that on the one hand there is an even distribution of the cleaning agent on all surfaces of the furnace space to be cleaned and on the other hand the cleaning effect is intensified by the circulation of the furnace atmosphere.
- Another advantage of this embodiment is that the blower and the blower chamber itself are also included in the cleaning action, which was previously not possible with conventional cleaning systems.
- the spray nozzle can also be arranged on the ceiling of the furnace chamber, it also being possible for the running blower to achieve a uniform distribution of the cleaning agent in the furnace chamber.
- the spray nozzle can be coupled to a fixed connection via a coupling.
- This measure has the advantage that the spray nozzle can be plugged in at the beginning of the cleaning process and can be removed again after the cleaning process has ended, so that the cleaning nozzle does not appear during normal operation of the oven and cannot become dirty.
- the coupling can for example be designed as a bayonet lock.
- the spray nozzle can be coupled to a spray tube, which can be connected via a valve control either to a water connection or to a reservoir for the cleaning agent.
- cleaning liquid can first be fed into the oven via the spray nozzle, in order to then automatically initiate a rinsing process after the oven space has been cleaned. Since the spray nozzle is thus also rinsed, contamination of the furnace space by detergent emerging from the spray nozzle is reliably avoided.
- the spray tube is designed as a humidification tube, which is designed to optionally receive the spray nozzle or a humidification nozzle.
- the spray nozzle itself can also serve as a humidification nozzle.
- the oven has a central control with which an automatic cleaning of the oven space can be carried out according to a specific cleaning program.
- the temperature of the oven space is first brought to about 30-70 ° C., preferably to about 40-60 ° C., then the cleaning liquid is sprayed in with the fan switched on, the oven space is rinsed with water after a predetermined exposure time and then at an elevated temperature, preferably dried at about 70 ° C - 90 ° C, especially in the range of about 80 ° C.
- the furnace atmosphere is preferably circulated by the fan not only when the cleaning agent is sprayed, but also during the subsequent cleaning step, as a result of which the cleaning effect is intensified.
- the cleaning and rinsing steps can be repeated several times.
- the fan also expediently running during this drying step, too that the furnace atmosphere is circulated in order to accelerate and intensify the drying process.
- an oven according to the invention is generally designated by the number 10.
- the furnace 10 comprises a housing 48, within which a furnace chamber 12, preferably lined with stainless steel sheet, is provided, separated by thermal insulation, which can be closed by a door 50 on its front side.
- a blower chamber 34 is separated by a separating plate 36, within which a blower 16 designed as a radial blower is provided, which is driven by a motor 17.
- the blower 16 draws in through a central intake port 11 through a central opening in the separating plate 36 and blows out the sucked-in air in the pressure region 19 laterally through a gap between the separating plate 36 and the walls of the furnace chamber 12 into the furnace chamber 12. With the fan 16 running, there is therefore a constant air flow, wherein the furnace atmosphere is sucked in from the suction area 18 in front of the central suction nozzle 11 of the blower 16 and is blown out again into the furnace chamber 12 along the wall surfaces.
- a floor drain 52 is provided on the floor 15 of the furnace chamber 12, the outlet line of which can be closed via a solenoid valve 54.
- an upper heating element 30 and a lower heating element 32 are provided, which are connected to a central controller 28 via control lines 37, 38.
- heating elements 30, 32 are only indicated as examples of top and bottom heat and that, in addition or as an alternative, the blower 16 can be surrounded by a ring heater.
- a spray tube 22 is provided in the furnace chamber 12, which extends upwards through the ceiling 13 and is connected to a reservoir 26 of cleaning liquid via a check valve 46 and a rump 44.
- the spray tube 22 extends vertically downward and ends immediately in front of the intake port 11 of the fan 16, that is to say in the intake area 18 of the fan 16.
- a coupling 20 is provided, to which a spray nozzle 14 can be coupled, via which the reservoir 26 via the pump 44 and the check valve 46, cleaning liquid can be sprayed forward into the furnace chamber 12, as indicated by the arrows 68 in FIG. 1.
- a humidifying tube 60 is arranged, which likewise ends in the suction area 18 shortly before the suction nozzle 11 of the blower 16 and has a coupling 62 at its lower end for receiving a humidifying nozzle 64, via which liquid is finely distributed in the direction of the blower 16 can be sprayed, as indicated by the arrows 66.
- the humidification tube 60 can be connected to a water connection 24 via a solenoid valve 56.
- the spray tube 22 can be connected on the one hand via the check valve 46 and the pump 44 to the reservoir 26 of the cleaning liquid and, on the other hand, can also be connected to the water connection 24 via a bypass line and a solenoid valve 58.
- the pump 44, the solenoid valves 56, 58 for supplying water into the humidification tube 60 or the spray tube 22, and also the solenoid valve 54 in the floor drain 52 are connected to the central control 28 via corresponding control lines 42, 40, 41, 39.
- the motor 17 for driving the fan 16 is also activated by the central control 28 via a control line 43.
- cleaning fluid can be sprayed from the reservoir 26 via the pump 44 and the check valve 46 into the furnace chamber 12 via the spray nozzle 14, the two solenoid valves 56, 58 leading to the water connection 24 generally being closed and also that Solenoid valve 54 in the floor drain 52 is closed.
- fresh water can be supplied from the water connection 24 via the bypass line 23 with the solenoid valve 58 open and sprayed into the furnace chamber 12 via the spray nozzle 14.
- the central control is preferably designed as a program control with which a predetermined cleaning program can be started, which runs automatically, e.g. after the baking operation in the oven 10 to perform an automatic cleaning.
- the spray nozzle 14 is first plugged onto the spray tube 22 before the start of the cleaning program, which can be done, for example, by means of a bayonet catch. It goes without saying that, instead of the spray nozzle 14, the spray nozzle could also be designed to be exchangeable together with the part of the spray tube 22 which protrudes into the furnace space 12, so that the coupling 20 could be moved approximately into the area of the ceiling 13.
- the cleaning program can be started, after which it is first checked whether the oven space 12 has a temperature of approximately 40-60 ° C. and the oven is heated, if necessary, until this temperature is reached.
- the fan 16 is then switched on and cleaning fluid is sprayed through the spray tube 22 through the spray nozzle 14 into the furnace chamber 12 via the pump 44 and the check valve 46.
- the spray nozzle 14 can be set so that the cleaning agent is finely atomized or foamed.
- the cleaning agent is circulated by the running fan 16 in the furnace chamber 12 and a part of the cleaning agent is sucked in via the suction nozzle 11 and blown back into the furnace chamber 12 via the pressure side 19 of the fan 16.
- there is one constant circulation of the cleaning agent in the furnace chamber 12 and also in the blower chamber 34 so that the cleaning agent is evenly distributed and comes into intensive contact with distant, contaminated points.
- the blower 16 itself is also cleaned at the same time.
- the solenoid valves 56, 58 for the fresh water supply and 54 in the floor drain 52 are closed.
- the pump 44 is switched off and the solenoid valve 54 in the floor drain 52 is opened.
- the solenoid valve 58 open in the bypass line 23
- fresh water can be sprayed from the water connection 24 through the spray tube 22 through the spray nozzle 14 into the furnace chamber 12 in order to now completely remove the cleaning liquid from the furnace chamber 12 in a rinsing step.
- the fan 16 expediently remains in operation even during this rinsing step.
- the heating can already be switched off at this point in order to save energy.
- the solenoid valve 58 in the bypass line 23 is closed and the furnace chamber 12 is preferably at an elevated temperature in the range of approximately 70-90 ° C. dried at about 80 ° C until all oven parts are completely dry.
- the end of the cleaning program that has now been reached can be indicated acoustically or optically, for example. After removing the spray nozzle 14, the oven 10 is ready for operation again.
- the cleaning and rinsing steps can also be repeated a number of times, in order, for example, to enable particularly intensive cleaning if the oven space is particularly heavily soiled.
- the humidification tube 60 described above is not used during the cleaning of the oven and is only used during oven operation in a manner known per se, in order to enable steaming, for example when baking rolls.
- FIG. 2 A modification of the furnace according to the invention is shown in FIG. 2 and is designated overall by the number 10 '.
- the spray tube 22 and the humidification tube 60 are formed by a single common line, which ends in front of the intake port 11 of the fan 16 in its intake area 18.
- a first coupling 20 for receiving the spray nozzle 14 which injects the cleaning agent forward into the furnace chamber 12 enables and a further coupling 62, to which the humidification nozzle 64 can be coupled in order to spray water in the direction of the intake port 11 during operation of the furnace.
- the spray nozzle 14 and the humidification nozzle 64 could also be formed by a common nozzle which can be coupled to a common coupling of the humidification tube 60.
- the humidification tube 60 is connected to the water connection 24 via a check valve 47 and a solenoid valve 56 and is connected to the reservoir 26 for the cleaning agent via a further check valve 48 and a pump 44.
- the structure of the furnace 10 corresponds completely to the structure of the furnace 10 previously described with reference to FIG. 1.
- a supply of cleaning agent from the reservoir 56 is possible via the pump 44 and the check valve 48 when the solenoid valve 56 is closed, while when the pump 44 is switched off and the solenoid valve 56 is open, fresh water can be supplied from the water connection 24 in order to either flush the oven space 12 or around to carry out steaming while the furnace is in operation.
- check valves may also be dispensed with in this and also in the embodiment previously described with reference to FIG. 1.
- FIG. 3 A further modification of the furnace according to the invention is shown in FIG. 3 and is designated overall by the number 10 ′′.
- the spray nozzle 14 is coupled to the spray line 22 as a spray head on the ceiling 13 via a coupling 20, while the humidification tube is connected to the water connection 24 via the solenoid valve 56 in the manner previously described with reference to FIG. 1 connected is.

Abstract
Description
The invention relates to an oven for the heat treatment of food, with a heatable oven space and with a cleaning device for cleaning the oven space with a cleaning agent.
The invention further relates to a method for cleaning an oven chamber of an oven for the heat treatment of foodstuffs, in which a cleaning agent is introduced into the oven chamber.
Such an oven and such a method for cleaning an oven space are known from
In the known furnace, the furnace space is cleaned by means of a liquid detergent, by applying the detergent to the bottom of the furnace space and then heating the furnace space to heat the detergent and finally to evaporate it at a temperature between about 50 to 70 ° C. The evaporated cleaning agent is intended to loosen contaminants on the side walls and the ceiling of the furnace chamber and is then removed manually after the furnace has cooled down.
With the known furnace and the known method, cleaning of the furnace space can only be partially achieved in the event of heavy soiling, since not all areas of the furnace can be reached uniformly by evaporation of the cleaning agent. Furthermore, the known arrangement is not suitable for fully automatic operation, since manual post-cleaning is required.
The object of the invention is therefore to provide an improved oven for the heat treatment of food and an improved method for cleaning an oven space, in which the above disadvantages are avoided. In particular, the best possible cleaning effect should be achieved and an automatic cleaning process should also be made possible.
This object is achieved in a furnace according to the type mentioned at the outset in that the cleaning device has a spray nozzle for spraying the cleaning agent in the furnace chamber.
With regard to the method, the object of the invention is achieved in that the cleaning agent is sprayed in the furnace chamber in a method according to the type mentioned at the outset.
The object of the invention is completely achieved in this way, since spraying the cleaning agent in the oven space can achieve a particularly uniform distribution of the cleaning agent on the surfaces to be cleaned, and at the same time, depending on the configuration of the spray nozzle, nebulization or foaming of the cleaning agent can be achieved to improve the cleaning effect.
Since the supply of the cleaning agent via one or more spray nozzles into the furnace space can be easily controlled automatically via valves, this version is also particularly suitable for automatic operation.
In an advantageous development of the invention, the oven has a blower and the spray nozzle is arranged in the suction area or in the pressure area of the blower.
In this way, when the cleaning agent is sprayed into the furnace chamber while the fan is running, a particularly good distribution of the cleaning agent over all surfaces of the furnace chamber to be cleaned can be achieved.
The blower is preferably designed as a radial blower, which is arranged behind a rear partition of the furnace chamber in a separate blower chamber and draws in from the rear wall of the furnace chamber via a central suction nozzle. If, according to the invention, the cleaning liquid is preferably sprayed in the area of the suction side of the fan while the fan is running, the cleaning liquid is at least partially blown by the fan sucked in and then evenly distributed by the blower in the furnace chamber and also in the blower room behind. This results in a constant swirling and a constant transport of the cleaning agent, so that on the one hand there is an even distribution of the cleaning agent on all surfaces of the furnace space to be cleaned and on the other hand the cleaning effect is intensified by the circulation of the furnace atmosphere. Another advantage of this embodiment is that the blower and the blower chamber itself are also included in the cleaning action, which was previously not possible with conventional cleaning systems.
In an alternative embodiment of the invention, the spray nozzle can also be arranged on the ceiling of the furnace chamber, it also being possible for the running blower to achieve a uniform distribution of the cleaning agent in the furnace chamber.
In a preferred development of the invention, the spray nozzle can be coupled to a fixed connection via a coupling.
This measure has the advantage that the spray nozzle can be plugged in at the beginning of the cleaning process and can be removed again after the cleaning process has ended, so that the cleaning nozzle does not appear during normal operation of the oven and cannot become dirty.
The coupling can for example be designed as a bayonet lock.
In a further preferred embodiment of the invention, the spray nozzle can be coupled to a spray tube, which can be connected via a valve control either to a water connection or to a reservoir for the cleaning agent.
In this way, cleaning liquid can first be fed into the oven via the spray nozzle, in order to then automatically initiate a rinsing process after the oven space has been cleaned. Since the spray nozzle is thus also rinsed, contamination of the furnace space by detergent emerging from the spray nozzle is reliably avoided.
According to a further embodiment of the invention, the spray tube is designed as a humidification tube, which is designed to optionally receive the spray nozzle or a humidification nozzle.
In this way it is possible to use the humidification tube, which is already present in most ovens, for moistening the food during operation, simultaneously for supplying the cleaning agent and for subsequently rinsing the oven space.
The spray nozzle itself can also serve as a humidification nozzle.
Alternatively, it is conceivable to provide the spray tube for supplying the cleaning agent separately to a humidification tube.
In a preferred development of the invention, the oven has a central control with which an automatic cleaning of the oven space can be carried out according to a specific cleaning program.
In this way, cleaning of the furnace space can be carried out automatically after the furnace has stopped operating.
According to this cleaning program, the temperature of the oven space is first brought to about 30-70 ° C., preferably to about 40-60 ° C., then the cleaning liquid is sprayed in with the fan switched on, the oven space is rinsed with water after a predetermined exposure time and then at an elevated temperature, preferably dried at about 70 ° C - 90 ° C, especially in the range of about 80 ° C.
It has been shown that particularly intensive cleaning of the furnace space can be achieved in this way with automatic operation.
In this case, the furnace atmosphere is preferably circulated by the fan not only when the cleaning agent is sprayed, but also during the subsequent cleaning step, as a result of which the cleaning effect is intensified.
If necessary, the cleaning and rinsing steps can be repeated several times.
In the subsequent drying process, which preferably takes place approximately in the range of 70-90 ° C., in particular in the range of approximately 80 ° C., the previously moistened oven parts are completely dried, the fan also expediently running during this drying step, too that the furnace atmosphere is circulated in order to accelerate and intensify the drying process.

The
On the rear side of the
It goes without saying that the
In addition to the
The
The
To clean the
After the cleaning process has ended, fresh water can be supplied from the
The central control is preferably designed as a program control with which a predetermined cleaning program can be started, which runs automatically, e.g. after the baking operation in the
For this purpose, the
If the
During the spraying in of the cleaning agent, the
If sufficient cleaning fluid is sprayed into the
After the cleaning step has ended, the
The end of the cleaning program that has now been reached can be indicated acoustically or optically, for example. After removing the
It goes without saying that the cleaning and rinsing steps can also be repeated a number of times, in order, for example, to enable particularly intensive cleaning if the oven space is particularly heavily soiled.
The
A modification of the furnace according to the invention is shown in FIG. 2 and is designated overall by the number 10 '.
Corresponding reference numerals are used for corresponding parts.
For the sake of clarity, the heating elements and the control lines are not shown in FIG. 2.
In contrast to the embodiment according to FIG. 1, the
Alternatively, the
The
Im übrigen entspricht der Aufbau des Ofens 10' vollständig dem Aufbau des zuvor an Hand von Fig. 1 beschriebenen Ofens 10.Otherwise, the structure of the furnace 10 'corresponds completely to the structure of the
A supply of cleaning agent from the
Depending on the type of pump and solenoid valves used, the check valves may also be dispensed with in this and also in the embodiment previously described with reference to FIG. 1.
A further modification of the furnace according to the invention is shown in FIG. 3 and is designated overall by the
In contrast to the previously described embodiment, the
In this embodiment, corresponding reference numerals are used for corresponding parts as in Fig. 1.
Cleaning fluid can be sprayed from the
In the illustration shown, the purging takes place only via the
Alternatively, the
As already mentioned above, the steaming
The design of the
The two-part design of the humidifying tube with a tubular body and a humidifying nozzle, which can be exchangeably attached to the tubular body, gives considerable advantages over known designs, since in the conventional way a humidifying nozzle was always made in one piece with the humidifying tube and thus tended to calcify during operation. This meant that the entire humidification tube had to be replaced frequently by a customer service technician due to calcification.
This is avoided by the split design of the humidification tube and humidification nozzle, since a calcified humidification nozzle can be replaced by the user at any time.
