Diese Füllhöhe entspricht einem bestimmten vorgewählten Mischungsverhältnis. Die Membrandichtung schließt jetzt den Zufluß und durch öffnen einer anderen Membrandichtung strömt Wasser von unten durch das Konzentrat, mischt sich mit diesem und steigt bis zu einem vorgegebenen Niveau , durch welches wieder ein Schalter betätigt wird, der diese Membrandichtung absperrt. Während des Hochsteigens der Flüssigkeit im Mischbehälter wird die Luft aus diesem durch einen Stutzen herausgedrückt.
Nachteilig ist hierbei, daß als Ausgangsgröße für eine Dosierung das Niveau der verschiedenen Flüssigkeiten in einem Mischbehälter benutzt wird. Die Dosiergenauigkeit ist abhängig vom Mischungsverhältnis. Je größer das Verhältnis von Sirup zu Wasser ist, desto geringer wird die Genauigkeit der Anteile der zu mischenden Komponenten. Bei dieser Vorrichtung ist wenigstens ein Behälter vorgesehen, in dem die Komponenten zur Dosierung abgemessen werden und die chargenweise in einen Sammelbehälter entleert werden, aus dem das Gemisch einem nachgeschalteten Nachmischbehälter zugeführt wird, wodurch eine wenigstens zweisstufige Mischung erreicht wird. Dabei wird CO₂ im Gegenstrom zur Flüssigkeitsführung durch den Nachmischbehälter, den Sammelbehälter und wenigstens einen Abmeßbehälter bzw. einen diesem vorgeschalteten Komponentenvorratsbehälter geführt. Auf diese Weise soll eine dreistufige Entlüftung und Karbonisierung bei einer guten Vermischung erfolgen. Für Getränke mit einer flüchtige Aromastoffe enthaltenden Komponente, ist der in Gasführungsrichtung letzte Behälter ein Abmeßbehälter bzw. Komponentenvorratsbehälter für die Komponente, die keine aromatischen Stoffe enthält. Beim Entleeren in den Sammelbehälter durchströmt die größte Komponente den Abmeßbehälter kleinerer Komponenten.
Der Nachteil dieser Vorrichtung besteht darin, daS eine Variation des Mischungsverhältnisses nur in eng begrenztem Rahmen möglich ist, da die kleinere Komponente, meist Sirup, immer ein konstantes Volumen aufweist. Eine solche Mischvorrichtung muß also immer mit einer festen Grundeinstellung betrieben werden. Der Dosierbehälter der kleineren Komponente weist außer einem Zulauf für die kleinere Komponente einen zusätzlichen Zulauf auf, durch welchen aus einem Vorratsbehälter eine Menge der größeren Komponente in den Dosierbehälter der kleineren eingefüllt werden kann, bevor eine dem vorgesehenen Mischungsverhältnis entsprechende Menge der kleineren Komponente aus dem Vorratsbehälter eingelassen wird.
Nachteilig bei dieser Vorrichtung ist insbesondere der aufwendige apparative Aufbau der Dosierung und Mischung der einzelnen Komponenten, da für jede Komponente eine komplette Dosiereinheit vorhanden sein muß. Dadurch kann die Vorrichtung sehr einfach gestaltet werden und besitzt nur wenige Verschleißteile. Sie ist universell einsetzbar. Durch das Vorhandensein nur einer einzigen Pumpe ist der Energieeinsatz gering. Zur Dosierung werden Durchflußmeßeinrichtungen angewendet. Weiterhin ist durch die ständige Umwälzung des Getränkegemischstromes eine vollständige Mischung vorhanden, d.h. das fertige Getränk ist völlig homogenisiert. Verfahrensgemäß wird das Getränk aus mehreren fließfähigen Komponenten hergestellt. Zur besseren Dosierung werden die Stömungsgeschwindigkeiten der einzelnen Komponenten bevor die Sollwerte der Dosierungen erreicht sind, herabgesetzt, d.h. es wird in einem sogenannten Schleichgang gefahren. Sind die Sollwerte erreicht wird die Zudosierung unterbrochen. If the beverage mix is to be vented and carbonized, the beverage mix recirculation stream is also used as a driving jet for the suction of the inert gas, preferably CO₂. For better dosing, the flow velocities of the individual components are reduced before the dosing setpoints are reached, ie it is operated in a so-called slow speed. The metering is interrupted when the setpoints are reached. The process can also be operated in such a way that the circulation of the mixed beverage flow is constant and the metered addition of the components at intervals or that the circulation is only carried out for one batch at a time. The components can be added in series or in parallel circulation lines can be made. The finished beverage mix is then taken directly from the beverage mix recirculation stream and collected and, if provided, post-carbonated. It is then discharged.
Die Vorrichtung zum Herstellen von Getränken aus mehreren fließfähigen Komponenten besteht aus einem liegenden Behälter, der durch eine radiale Trennwand 1 in einen Wasserbehälter 2 und einen Gemischsammelbehälter 3 unterteilt ist. In den Wasserbehälter 2 mündet eine durch ein Ventil 4 absperrbare Wasserzulaufleitung 5 und zur Abführung von Gas ist am oberen Teil des Wasserbehälters 2 eine Gasableitung 6 mit Rückschlagventil 7 vorgesehen. Der Gemischsammelbehälter 3 besitzt eine Getränkegemischumwälzleitung 8, deren Anfang im Boden des Gemischsammelbehälters 3 angeordnet ist und die wiederum im Gemischsammelbehälter 3 im oberen Teil endet. In dieser Getränkegemischumwälzleitung 8 ist eine Pumpe 9 angeordnet. Dieser Pumpe 9 sind in der Getränkegemischumwälzleitung 8 im Beispiel drei Injektoren 10; 11; 12 nachgeordnet, wobei der Getränkegemischumwälzstrom als Treibstrahl für diese Injektoren 10; 11; 12 benutzt wird. Der Injektor 10 ist über eine Leitung 13 mit dem Wasserbehälter 2, der Injektor 11 ist über eine Leitung 14 mit einem Behälter 15 für fertigen Sirup und der Injektor 12 ist über eine Leitung 16 mit einer CO₂-Quelle verbunden. Diese Leitungen 13; 14; 16 sind ansaugseitig an den Injektoren 10; 11; 12 angeordnet. Zur Dosierung von Wasser und fertigen Sirup besitzen die Leitungen 13 und 14 je eine Durchflußmeßeinrichtung 17 und 18. Weiterhin sind in den Leitungen 13 und 14 je eine schaltbare Drossel 19 und 20 und je ein Absperrventil 21 und 22 angeordnet. In der Leitung 16 zur CO₂-Quelle ist ebenfälls ein Absperrventil 23 vorhanden. Die Leitung 16 beginnt in einem Nachkarbonisier- und Fertigproduktsammelbehälter 24. Dieser Nachkarbonisier- und Fertigproduktsammelbehälter 24 steht mit der Getränkegemischumwälzleitung 8 durch eine Fertiggemischleitung 25 in Verbindung, die von der Getränkegemischumwälzleitung 8 nach der Pumpe 9 abzweigt und in der ein Absperrventil 26 eingebaut ist. Das Absperrventil 26 ist über eine Software gesteuert. Bei Stillstand der Pumpe 9 ist das Absperrventil geschlossen. Außerdem befindet sich in der Fertiggemischleitung 25 ein weiterer Injektor 27, der ansaugseitig mit einer CO₂-Quelle 28 verbunden ist. Die Wirkungsweise ist folgende:
Im Gemischsammelbehälter 3 befindet sich gemischtes Getränk. Dieses Getränk wird durch die Pumpe 9 über die Getränkegemischumwälzleitung 8 ständig umgewälzt. Das Getränk wird also dem Gemischsammelbehälter 3 entnommen und diesen wieder zugeführt. Es wird dabei fortlaufend gemischt und homogenisiert. In der Getränkegemischumwälzleitung 8 befinden sich die Injektoren 10;11;12, die ansaugseitig mit den Leitungen 13;14;16 für die einzelnen zu mischenden Komponenten bzw. mit einer CO₂-Quelle 28 verbunden sind. Als Treibstrahl für die Injektoren 10;11;12 wird der Getränkegemischumwälzstrom benutzt. Für die Umwälzung ist nur eine Pumpe 9 vorgesehen. Wasser als mengenmäßig größere Komponente wird über die Wasserzulaufleitung 5 bei geöffneten Ventil 4 dem Wasserbehälter 2 zugeführt. Die mengenmäßig kleineren Komponenten, im Beispiel nur eine Komponente, nämlich fertiger Sirup, befinden sich im Behälter 15. Diese beiden Komponenten werden je über eine Leitung 13;14, in denen sich Absperrventile 21;22, schaltbare Drosseln 19;20 und je eine Durchflußmeßeinrichtung 17;18 befinden, den Injektoren 10;11 ansaugseitig zugeführt. Es werden die Komponenten im Durchlauf abgemessen und in den Getränkegemischumwälzstrom zudosiert. Soll das Getränk entlüftet und karbonisiert werden, wird der Injektor 12 zugeschaltet, der mit der CO₂-Quelle 28 verbunden ist. Auch hierbei wird der Getränkegemischumwälzstrom als Treibstrahl benutzt. Die Strömungsgeschwindigkeiten der Komponenten werden proportional zu den Mengen gewählt, so daß die Dosierungen in etwa zu gleicher Zeit beendet werden. Um eine bessere Dosierung zu erreichen, werden die Strömungsgeschwindigkeiten der einzelnen Komponenten bevor die Sollwerte der Dosierungen erreicht sind, herabgesetzt, d.h. es wird in einem Schleichgang gefahren. Die Drosseln 19;20 werden entsprechend geschaltet. Sind die Sollwerte erreicht, werden die Absperrventile 21;22 geschlossen. Diese Dosierung kann in der Weise betrieben werden, daß das Umwälzen des Getränkegemischstromes ständig und das dosierte Zufügen der Komponenten in Intervallen oder auch das Umwälzen jeweils nur für eine Charge erfolgt. Das fertige Getränk wird aus der Getränkegemischumwälzleitung 8 über die Fertiggemischleitung 25 in einen Nachkarbonisier- und Fertigproduktsammelbehälter 24 geleitet. Es wird dort gesammelt und, wenn gewünscht, nachkarbonisiert. Dazu ist in der Fertiggemischleitung 25 ein weitere Injektor 27 vorhanden, der an die CO₂-Quelle 28 angeschlossen ist. Das fertige Getränk wird dann über die Produktablaßleitung 30 z.B. einer Abfüllmaschine zugeführt. Zur Herstellung der unterschiedlichsten Getränke wird eine Software benutzt. Diese Software steuert entsprechend den gewünschten eingegebenen Daten und den in den Behältern vorhandenen Minimum- und Maximumkontakten die Gesamtmaschine.The mode of action is as follows:
