Description

A cutter head according to the preamble of claims 1 and 7 is known from DE-C 22 12 374. With this knife head, the segment-shaped knives are clamped between the rings and discs made of stainless steel and centered and secured by two bolts pressed into the rings. Because the knives are made of a different steel than the rings and disks, electrolytic corrosion of the knives at the contact points with the rings and disks can occur in the wet atmosphere of the cutter. In addition, the rings and disks can show slight damage over time due to handling, which can lead to locally excessive contact forces. This can lead to knife fatigue fractures.

The invention has for its object to develop a cutter head according to the preamble of claims 1 and 7 such that the above disadvantages are avoided. This object is achieved by the characterizing features of claims 1 and 7, respectively.

From DE-C 30 44 632 it is known to use plastic spacer rings in a cutter head for a cutter. Concentric traction sheaves made of metal are inserted in the axial recesses of the spacer rings. These have a hexagon socket and are pushed onto a hexagon socket of the knife shaft. The traction sheaves have axially parallel centering holes for receiving centering bolts pressed into the knife segments. The two end plates of the cutter head are also made of plastic, a washer made of metal being inserted into the end plate facing the clamping nut.

In this known cutter head, the spacers on the periphery, outside the pitch circle diameter of the bolts, are hardly pressed axially. The pressure is predominantly inside, namely between the metal traction sheaves and the knives touching them. This creates the same corrosion problem as with the cutter head according to DE-C 22 12 374. The traction sheaves, like the rings according to DE-C 22 12 374, can have slight damage due to handling, which in turn can lead to greatly excessive contact forces and fatigue fractures of the knives. The cutter head according to DE-C 30 44 632 therefore has the same disadvantages mentioned above as the cutter head according to DE-C 22 12 374.

Darin zeigt:

  • Fig. 1 einen Axialschnitt durch einen Messerkopf;
  • Fig. 2 eine Ansicht eines Ringes, und
  • Fig. 3 eine Ansicht eines Messers.
An exemplary embodiment of the invention is explained below with reference to the drawing. It shows:
  • 1 shows an axial section through a cutter head;
  • Fig. 2 is a view of a ring, and
  • Fig. 3 is a view of a knife.

Der Einsatz 10 hat ferner zwölf achsparallele Durchgangsbohrungen 15.In FIG. 1, for the sake of a better overview, only one half of an axial section through a cutter head of a cutter is shown. The knife head is mounted on a horizontal, driven knife shaft 1 and clamped on the shaft 1 with a clamping device, shown as screw 2. A sleeve 3 is pushed onto the shaft 1 and secured against rotation by means of a wedge 4. The sleeve 3 lies against a shoulder 5 of the shaft 1. It has an external hexagon 6 which is delimited by a shoulder 7. Two washers 8 are pushed onto the hexagon 6, one of which rests on the shoulder 7 and the other on the head of the screw 2. The disks 8 have an axial recess 9 facing each other. A plastic insert ring 10 is inserted into the recesses 9. At its periphery, this is thicker than the depth of the recess 9, so that it axially projects slightly beyond an axial collar 11 of the disk 8. The insert 10 has an axial shoulder 12 on the inside. In the untensioned position, the end face 13 of the disk 8 lies approximately in the same radial plane as the end face 14 of the collar 11 within the insert 10.

Between the disks 8, segment-shaped knives 20, each with two centering bores 21 and four further, larger bores on the same pitch circle diameter, are clamped in three knife planes at a distance of 30 ° from one another. The knives 20 are spaced apart from one another by plastic rings 22, 23, which are connected in a rotationally fixed manner to the sleeve 3 by means of an internal hexagon 24 (FIG. 2). The rings 22, 23 are encased by a tire 25 made of stainless steel. The tires 25 are axially somewhat shorter than the rings 22, 23.

Twelve axially parallel bolts 30, 31 are inserted into the rings 22, 23 with the same pitch circle diameter and evenly spaced from one another. The bolts 30 project beyond the ring 22 axially on both sides, the bolts 31 only over the ring 23 on one side. The bolts 30, 31 each have a radial flange 32, 33 that bears against a shoulder 34, 35 of the rings 22, 23. The bolts 30 are axially secured by a welded-in plastic ring 36 and the bolts 31 by a welded-in plastic disc 37. The disk 37 is sunk into the ring 23 by an amount which is somewhat larger than the amount by which the bolts 30 protrude from the ring 22. The knives 20 in the middle knife plane can thus optionally be omitted. The holes 15 also serve the same purpose. For this purpose, the inserts 10 are somewhat thicker than the dimension by which the bolts 30, 31 protrude from the rings 22, 23.

For assembly, the washers 8 and the rings 22, 23 are first pushed onto the hexagon 6 and the screws 2 are loosely screwed in. Now the segment-shaped knives 20 are attached to two bolts 30, 31 each. The knives can be offset by an integral multiple of 30 ° in the three knife levels. This enables the knife head to be adapted to the sausage meat to be produced in the cutter. Now screw 2 is tightened. The disks 8 are elastically deformed somewhat in the manner of disc springs, so that the periphery of the inserts 10 presses against the knives 20.

Due to the described design of the cutter head, the cutters 20 are clamped between plastic parts 10, 22, 23 so that the electrolytic corrosion is avoided. Since the plastic is much softer than the knife steel, even with slightly damaged rings 22, 23 and inserts 10, a uniform axial pressure is achieved, so that there are no excessively high, locally concentrated contact forces. In particular, the edges of the tires 25 and the bundles 11, which are particularly exposed with regard to handling damage, do not come into contact with the knives 20. This can avoid the risk of fatigue fractures. In addition, in the embodiment according to the invention, the rings 22, 23 are lighter and therefore easier to handle. Because of the metal tires 25, the shaft 1 can be driven at high speed without the risk of the rings 22, 23 being destroyed.

In order to ensure a secure hold of the bolts 30, 31 in the rings 22, 23 even under the high centrifugal forces on the knives 20 at high speeds, the bolts 30, 31 are arranged approximately in the radial center of the rings 22, 23. The knives 20 therefore have a clamping section 40 in the form of a semicircular ring, in which the pitch circle radius 41 of the centering bores 21 and the further bores 44 corresponds approximately to the mean value between the inner radius 42 and the outer radius 43.

A crescent-shaped knife blade 45 projects from the clamping section 40 with an arcuate cutting edge 46. The outer circumference with the knife radius R of the blade 45 is ground to form a relatively blunt emulsifying edge 47. The emulsifying edge 47 is not reground.

The knife 20 shown in FIG. 3 is particularly suitable for the production of sausage meat for cooked sausages. The ratio of the radius of curvature A of the cutting edge 46 to the knife radius R is approximately 0.79 and the ratio of the distance B of the center of curvature M of the cutting edge 46 from the knife axis 48 to the knife radius R is approximately 0.51. With this design, the cutting angle a of the tangent 49 of the cutting edge R with the radial direction 50 is little dependent on the cutting radius r. It fluctuates between 49 ° and 59 ° over the radius r.
