Insbesondere bei Glattwalzen, wie sie für die Ausmahlung von Getreideprodukten zur Erzeugung von Dunst und Mehl usw. eingesetzt werden, ist es erforderlich, daß die Messerabstreifer die Walzen stets von anhaftenden Mehlpartikeln freihalten, um dadurch zu verhindern, daß sich das Mahlgut auf den Walzen « aufwickeln » kann. Denn örtlich anhaftendes Produkt führt zu einer Veränderung der Mahlverhältnisse und birgt die Gefahr in sich, daß dadurch Walzen beim Mahlprozeß beschädigt werden können. Eine sichere Funktion der eingesetzten Messerabstreifer ist daher im Interesse eines ordnungsgemäßen Arbeitens des ganzen Walzenstuhles sehr wichtig, weshalb solche Messerabstreifer auch laufend betreut und nachgestellt werden müssen. Einer der wesentlichen Nachteile bisheriger Messerabstreifer liegt in einer unbequemen Einstellung der Messer. Denn in der Regel müssen die Messer nach einem Überschleifen der Walzen und beim Einsetzen neuer Messer von Hand eingestellt werden. Dabei wird in üblicher Weise jedes Messer in Art eines Haarlineals mittels Gegengewicht sehr genau eingestellt. Ein individuelles Einstellen der Messer von Hand ist bei der vorbekannten Lösung überhaupt nicht mehr möglich. Ein weiterer vorbekannter Messerabstreifer der eingangs genannten Art (GB-A-204 959) weist ebenfalls bereits einen Messerhalter auf, der um eine Achse drehbar bzw. verschwenkbar und damit gegen die Walze anlegbar angeordnet ist. Eine Vielzahl von Hebelarmen ist über die Länge des Messerhalters vorgesehen, wobei diese Hebelarme als Verspannelemente angesehen werden können, da jeder solcher Hebelarm über ein zugehöriges Handeinstellrad zumindest in einer Richtung (unabhängig von den anderen solchen Hebeln) verstellbar ist : dies bedeutet, daß über jeden einzelnen Hebel jeweils örtlich eine mehr oder weniger starke Verbiegung des Messerbalkens bewirkt werden kann und dies auch für den Fall, daß die beiden seitlich neben einem Hebelarm liegenden beiden anderen Hebelarme eine andere Stellung aufweisen. Hierdurch ist bei dieser vorbekannten Lösung mittels der einzelnen Einstellräder mit einer gewissen Unabhängigkeit voneinander das Aufbringen von Verbiegungen bzw. Verspannungen des Messerbalkens in einer Richtung möglich. Da die Einstellhebel jedoch zum Eingriff mit dem zugehörigen Einstellrad eine einseitig offene Nut aufweisen, können sie von dem betreffenden Einstellrad nur in eine Richtung auf das geschlossene Nutende hin mit Zug beaufschlagt werden und entsprechend ist auch nur eine Verbiegung in dieser Richtung möglich. Eine Verbiegung des Messerbalkens über den betreffenden Hebel in die andere Richtung kann allerdings nicht erfolgen. Durch die erfindungsgemäßen Maßnahmen läßt sich überdies das Messer viel leichter als bei herkömmlichen Messerabstreifern an die Form der zugeordneten Walze anpassen. Hierdurch wird bei dünnen Messern der aus dem Messerbalken überstehende Messerbereich relativ starr und es besteht keinerlei Gefahr des Auftretens unerwünschten Messerflatterns, während die gewünschte Messerverbiegung hauptsächlich innerhalb des Messerbalkens erfolgt. Der überstehende Bereich des Messers wird dann seinerseits nur noch ganz wenig durch seinen Andruck an die Walze elastisch verbogen.
