Изобретение относится к пищевой промышленности, в частности к пивоварению, и может быть использовано при производстве пива с высокой антиоксидантной активностью (АОА). Любое пиво обладает определенной АОА, то есть в нем уже присутствуют антиоксиданты. Задачей настоящего изобретения является повышение АОА пива без изменения его вкуса и запаха и без каких-либо нежелательных раздражающих эффектов для человека. Поставленная задача решается путем растворения в пиве молекулярного водорода под давлением. Водород - восстановитель, не имеет ни вкуса, ни запаха, нетоксичен и наиболее стабилен, когда находится в растворе. У пива при этом снижается до отрицательных значений окислительно-восстановительный потенциал (ОВП). Предложено светлое пиво, насыщенное под давлением до 6 бар молекулярным водородом, имеющее ОВП от минус 600 до минус 50 мВ и высокую АОА. Композиция пива и водорода обеспечивает синергетический эффект, проявляющийся в многократном увеличении АОА пива. Повышенная АОА пива защищает его от нежелательных процессов окисления при хранении. Пиво приобретает высокое качество, физиологическую ценность и восстановительный потенциал, что делает его более "живым".The invention relates to the food industry, in particular to brewing, and can be used in the production of beer with high antioxidant activity (AOA). In this case, beer decreases to a negative value the redox potential (ORP). A light beer, saturated under pressure up to 6 bar with molecular hydrogen, having an ORP of minus 600 to minus 50 mV and high AOA is proposed. The composition of beer and hydrogen provides a synergistic effect, manifested in a multiple increase in the AOA of beer. Increased AOA beer protects it from unwanted oxidation processes during storage. Beer acquires high quality, physiological value and reduction potential, which makes it more "alive".
