Abstract

For production of a whey protein hydrolysate with reduced allergicness, one first subjects an enzymatic hydrolysate of a whey product to a heat treatment and then to another hydrolysis by means of a proteolytic enzyme. Under these conditions, the smaller proteins which are not broken down after the first hydrolysis, and which are allergenic, will be broken down to peptides. The resulting hydrolysate can go into food preparations for dietary use, especially for small children.
