Abstract

A previously unknown maltogenic enzyme product having an improved thermal stability is prepared. The new enzyme can be obtained by culturing a newly discovered microorganism, Bacillus C599, which belongs to the Bacillus stearothermophilus group. Alternatively, the said enzyme can be prepared by culturing a host organism that has been transformed with the aid of a gene that codes for the new enzyme. The enzyme can be used to prepare syrups with a high maltose content. The new microorganism has been filed under NCIB number 11,837, and the enzyme produced is an amylase.
