man nun die unlöslichen Rückstände von der Lösung und säuert letztere an, so fallen
die höhenmolekularen Peptone und Eiweißkörper wieder aus, während die niedrigmolekularen
in Lösung bleiben. Nach Abtrennung des Niederschlages erhält man so eine klare Lösung,
die sich sehr leicht zu Schaum schlagen läßt und mit geeigneten Zusätzen, wie Zucker,
Aromastoffen, Fruchtsäften, Marmelade USW., versehen, als Schlagcreme und
Garnierungen auf Gebäck verwendet werden kann. Eines der weiteren Anwendungsgebiete

Beispiel i 3o kg Trockenhefe werden in 350 1 Wasser angerührt, dazu
81 NaOH (52o/oig) gegeben und erhitzt. Die Masse -wird i Stunde zwischen

versetzt und in Gefäße abgefüllt. Beispiel e i 8o kg Naßmycel von Oidium lactis
werden wie im Beispiel i mit 2ooi1 Wasser und 8 1 Na O H erhitzt. Nach denn Abkühlen
werden die Zellreste auf einem Drehfilter abgetrennt und das Filtrat ,mit H3 P04
bis PH 4,5 angesäuert. Der Niederschlag wird in einem Klärseparator abgetrennt und
zu einem Eiweißpulver getrocknet. Das Separat selbst wird in einem Sprühtrockner
