Milchsäure, Citronensäure und Citraconsäure, den Anteil dieser Säuren im Vergleich zu Essigsäure und diese Säuren untereinander nicht in beliebigen Mengenverhältnissen anwenden kann. Es wurde nun erkannt, daß neben Essigsäure, sei es Gärungs- oder synthetische Essigsäure, Milchsäure, Citronensäure und Citraconsäure gleichzeitig und in ganz bestimmten Mengenverhältnissen zur Essigsäure und untereinander angewandt werden müssen, um eine einwandfreie Fischkonservierung zu erzielen.Acetic acid has mainly been used to preserve fish products introduced and maintained in spite of their manifold disadvantages.
