Description
Method and device for treating beer with aluminum silicate of the montmorillonite type The patent 682 788 has the use of aluminum silicates of the montmorillonite type for the treatment of wort or beer by simple addition: or filtration of liquids over these substances, to the subject. The patent 679 765 relates to the treatment of waste beer from the brewery in the manner of residual and squeeze beer with aluminum silicates of the same type for the purpose of obtaining a drinkable, shelf-stable beer.
In the practice of this well-established procedure Certain difficulties arise in that -the aluminum silicates of the Montm-arillo: nits, but especially the bentanite, a very considerable swelling capacity own and as a result tend to clump, so that the distribution in the beer Difficulties and the Adsorptio.nsmittel not fully used can be. When treating other types of fluids with clarification or bentonite eats: it is known to initially use this additive: a proportion to mix the liquid to be treated and after sufficient swelling of the main amount of liquid to feed. This measure, however, alone leads to the treatment of beer unsatisfactory results, because here is the great foaming ability of the Beer very obstructive to achieve an even swelling. By doing The moment when the swellable aluminum silicate falls into the beer, leaves every particle creates gas bubbles that rise upwards and create a large amount of foam to develop. This show is then for the introduction of further quantities of the aluminum silicate obstructive. There are agglomerations to form lumps, which: only after collapsing of the foam or at least only after some time got into the beer.
The task, a: uniform suspension of aluminum silicates of the type under consideration here in beer despite its great foaming ability in easy way to achieve is achieved according to the invention in that the with the aluminum silicate to be mixed with carbon dioxide and foam beforehand freed or the scattering of the aluminum silicate under counter pressure performed whereupon, after swelling, stir the mixture and add the main amount of the zti treating beer is introduced.
The way of working: in which the aluminum silicate is in the beer is sprinkled is easier to carry out than the previous one There is no release of carbonic acid from this beer. As is well known. finds no carbonic acid. reenthi: tidü-ng from the beer when it is held under sufficient counter pressure. the In this case, the bento-nit is fed into the closed vessel with the beer Execution farm with the help of a sluice, which the Adsorptionsmi.ttel initially under normal pressure and then under the same pressure as that with the Mixing vessel filled with beer is set. By making the connection between The sluice and mixing vessel are then scattered around the adsorbent and in the beer allowed to swell.
The addition of the bentonite or fuller's earth swell can be divided into two be done in different ways. You can put the total amount of beer in an empty one Press the storage vessel and at the same time the swelling using a suitable device Introduce in an even distribution. Instead of this, however, the swelling can also be used or suspension can be pressed directly into the beer in the storage vessel. The introduction in this case is as follows: as close as possible to the surface of the beer, under the highest possible injection pressure, so that the slurry mixes well with the surface layers. The ones in your surface layers dispersed slurry gradually sinks to the bottom, getting on all layers to act. This is important in that the beer is not stirred in the storage keg can be.
The amount of the adsorbent can as a result of the pretreatment according to of the invention can be kept very low. In general, an addition is sufficient of o, o3 0, 'o of the beer to be treated to Bentont, in order to make the beer resistant to To make cold cloudiness. If: it is to be pasteurized, a is recommended Addition of about o, i ° / o. For squeeze beers there are generally somewhat larger quantities to use.
It is advisable to treat with fully fermented beers about i to To be carried out 2 weeks before filtering off.
One preferred for carrying out the method according to the invention Device is shown in the drawing.
For the production - the slurry is used a stelien.der, with a A closed cylinder 7 with a sight glass, rides a one-piece chimney 2 for receiving the adsorbent via a line that can be shut off by the tap 6 connected is. On top of chamber 2 and the _'7% -linder; Are located Taps 3 and 3 ', d'i (, connected to one another by a hose or a pipe-Ieittui- can be. In addition, there is a screw-in chamber on the infeed chamber Cap i closable filling opening available. At the lower end of the \ lischbeliälters the outlet line 5, which can be shut off by the tap io, is also located Container 7 equipped with a Rübruverk 4, which is driven by a drive 9 from the pair of bevel gears 8, for example with a speed of i5oL`Jmin, driven be ka, no.
The vessel is first heated to a pressure of, for example, 1 to 2 Atrir by means of carbonic acid or the like. which prevents the escape of carbonic acid. Then the beer is pressed from below through the nozzle 5 into the vessel, which flows in with a completely foam-free surface due to the strong counterpressure. The cock 5 is then closed and the adsorbent is introduced into the chamber 2 while the cock 6 is closed. The chamber 2 is then closed in a gas-tight manner by screwing on the cap i and placed under the same pressure as the vessel by means of the cock 3, which is most easily done by the cock 3 with the cock 3 'through a hose o ,. d, -, 1. connected and the two taps are opened. When the tap 6, which expediently has as wide a bore as possible, is opened, the adsorbent trickles over the beer in the vessel. The inlet speed can be regulated in the desired way by means of the faucet 6 or a built-in nozzle. After the adsorbent has been sprinkled in, it is left to swell for about 2 to 3 hours. Then that Rühiiverk .i in Be-I is set and the whole micro about 5 - w e- ii U # - stirred utes I. The finished slurry is finally pressed through the outlet 5 after opening the tap io into the beer to be treated. Before the mixing vessel is emptied, it is advisable to stir again ttm. Exemplary embodiment To make a cold-resistant beer, about 30 g of Bentoinit are used on roo 1. The treatment takes place in the storage cellar about 10 days before the filtration. Should z. If, for example, 5,000 1 beer are treated, 15,000 bentonite is swollen in 18 to 221 beer that is free of carbonic acid and ice-cold. The carbon dioxide can be removed by vigorous stirring. The suspension obtained after swelling and stirring the bentoinit is added to the main amount of the beer.
Instead of using carbon dioxide and foam b, -free beer can also in the device described above with the same amounts normal Beer to be worked. The weighed amount of entonite is then put into the inlet chamber 2 and that beer is pressed into the container 7, whereupon the Aufqulclliin, -i.n takes place in the manner described.
The specified Bentoinitmen represents an average value. It can can be reduced if the beer has been stored cold and for a long time. An increase is only required in unfavorable storage conditions, e.g. B. at unusual, higher Temperature of the storage room or unusually short storage period. If necessary, can the appropriate amount can also be determined by means of a preliminary test.
