Die Fische werden in Wasser conservirt, welches mittelst einer Eismaschine zum Gefrieren gebracht wird. Bei einer Zelle von 15 Pfund Eis soll das Verhältnifs 2/3 Fisch zu '/3 Wasser sein. Durch verschiedene Proben habe ich festgestellt, dafs im Hochsommer sich die Fische auf dem Transport mit der Bahn in gewöhnlichen Eisenbahnwagen 7 bis 8 Tage ganz frisch halten.The fish are preserved in water, which is made to freeze by means of an ice machine.
