Description
Because of health concerns about the physiological effects of caffeine already exists long been a need for decaffeinated coffee or tea. During decaffeinated coffee one has even market share, the demand for decaffeinated black tea is still increasing clearly.
The decaffeination is carried out in such a way that the ent in the coffee beans or tea leaves Caffeine kept open by moistening with water and then by a Lö is washed out. Such a solvent was e.g. B. methylene chloride. Because of The organic solvent group only raises health concerns today Ethyl acetate used. However, the solvents described suffer from the disadvantage of to be little selective and to the ready-to-use black tea important aroma and To withdraw flavors.
A significant improvement is the use of compressed gases as a solvent achieved. Carbon dioxide in particular shows preference because of its higher selectivity for caffeine Characteristics. No health-related residues are to be expected.
The selectivity of the carbon dioxide seemed to the applicants of the first patent, which the Decaffeinating black tea with carbon dioxide describes, but still not enough to be In this document (DE 21 27 642 C3) a method is presented in which dry gas, supercritical in terms of pressure and temperature, preferably carbon dioxide, the flavors are removed from the tea. Subsequently, it is moistened Tea with supercritical carbon dioxide removed the caffeine. Finally, the ge dried tea impregnates the aroma withdrawn in the first step by using supercritical pressure loads the gas stream with the previously separated aroma and this released by segregation or liquefaction of the gas in the tea. As a special feature emphasized that the flavoring and coloring ingredients of the tea, so z. B. Tanning substances, flavins and rubigens are not extracted, d. H. remain in the decaffeinated tea.
For three of the five steps of the process (aroma deprivation, moistening, decaffeination, Drying, aroma impregnation), namely for the first, third and fifth step expensive high pressure tanks needed; in addition, the tea has to be moved to other containers to be brought. As tastings showed, the quality advantage achieved justifies not the comparatively high effort.
Vorschläge für kostengünstigere, einstufige Verfahren, die ohne Aromaentzug und Rückimprä gnierung auskommen, finden sich deshalb ebenfalls in der Patentliteratur:Proposals for more cost-effective, one-step processes without aroma deprivation and reimpr government can also be found in the patent literature:
From DE 26 37 197 C2 is a selective separation of the caffeine from the loaded Lö means known. For this purpose, the supercritical loaded with caffeine and other accompanying substances cal carbon dioxide is not freed from caffeine and accompanying substances by reducing the pressure; rather, the loaded carbon dioxide flows through an acidic ion exchanger, where the caffeine is selectively adsorbed. Another improvement occurs when liquid carbon dioxide as Lö means is used (DE 34 13 869 C2). Greatest importance is attached to economy two other processes are laid, where again with supercritical carbon dioxide at special bedin conditions of pressure and temperature is extracted. The cleaning of the loaded solvent is carried out by adsorption of the transported ingredients on activated carbon (DE 33 39 181 C2 and DE 34 15 844 C2).
That these economically oriented processes were still not perfect, show further developments in which flavors are added to the decaffeinated tea (DE 36 40 333 C2, DE 36 40 967 A1 and DE 38 38 952 A1).
It has now been found that a high quality, decaffeinated black tea in one One step process can be obtained when the caffeine is separated from the load NEN carbon dioxide is carried out by washing with water in a countercurrent column. The height The quality of the tea is not only detectable by sensors, but is directly due to the high Purity of the separated caffeine clearly. In contrast to that by lowering the pressure The dark green caffeine solution obtained, which smells strongly of tea aroma, is the one after the An solution almost clear and has a caramel-like odor.
The washing out of caffeine from the loaded carbon dioxide is already related to decaffeinated coffee:
The basic patent AT-PS 290 962 (DE 20 05 293 C3) describes a process for decaffeination Green coffee is described in which a layer of green coffee and a layer of active coal moist carbon dioxide is passed. As an improvement according to DE 22 21 560 C3 carbon dioxide loaded with caffeine is passed through water where the caffeine is released. After the solution is saturated, it is replaced by fresh water. The solution will be Caffeine is separated and can be processed further.
B. eingedampft.According to DE 29 05 078 C2, carbon dioxide is an aqueous coffee solution in a column decaffeinated in countercurrent. The loaded carbon dioxide is then in another Column with water, also in countercurrent, freed from the caffeine and then into the extraction co lonne returned. The caffeine solution withdrawn from the column is in a known manner concentrated, e.g. B. evaporated.
A similar proposal is made in DE 26 38 383 A1. An optimization of the process Conditions of the washout process in that the density of the washable, loaded Carbon dioxide should not exceed a value of 0.75 g / ml is presented in EP 10 636 A1. Coffee beans and tea are used as sources of caffeine, but only aqueous extracts in the examples of green coffee beans (as in DE 26 38 383 A1), of roasted coffee (as in DE 29 05 078 C2) and called tea.
The decaffeination of green coffee beans and the subsequent cleaning of the loaded one Carbon dioxide by washing out in a column is also dealt with in EP 331 852 A2. Very it is precisely disclosed that carbon dioxide in addition to caffeine, other ingredients of green coffee beans NEN solves, so far from a real selectivity for caffeine. With the usual Rei Cleaning processes of carbon dioxide, such as adsorption and lowering of pressure, go this content substances are lost and are then missing in the aroma impression of the roasted coffee. Besides, he has to Raw caffeine is difficult to clean.

In contrast to coffee, in the industrial sector, the green beans are decaffeinated and then the roasting is already fermented for decaffeination black tea used. The ready-to-use product already contains all aroma and Flavorings, which are possible in their quantity and composition during decaffeination as far as possible not to be changed. According to the state of the art recognized at the beginning in any case, a return of the aroma for a high quality solid product to be indispensable after decaffeination.
So since the products to be decaffeinated (green coffee beans - finished tea) are in their pre Very differentiation between treatment is a simple transfer of experience at Decaffeination of green coffee beans is not possible on the decaffeination of tea leaves Lich.
The invention relates to the method specified in claim 1.
It has been found that the decaffeinated tea made according to the invention meets the requirements requirements of a quality-conscious tea drinker can suffice. By selectively washing out the Caffeine from the mixture of caffeine and aroma and taste dissolved in carbon dioxide substances, the solvent remains saturated with the aromas and flavors and takes away half prefers caffeine from the infused tea. This result is not only due to Tasting immediately clear, but can also be determined by a gas chromatograph the content of some aroma components.
High-pressure processes and systems for the extraction of natural products with compressed gases as Lö Means have been described many times. The moisturized tea to be decaffeinated becomes di filled directly or in insert containers into a high pressure container. After using the container filled with the solvent and the desired pressure is reached, preferably a verbin made for the solvent circuit. The solvent then flows through the bed several times in a row, preferably from bottom to top, loading itself with ingredients fen. The loaded solvent is then passed into a washing column, where preferred as a countercurrent to the solvent, a detergent, preferably pure water becomes. The circulation of the solvent is preferably carried out by a centrifugal pump see from friction losses - maintain isobaric conditions. Will changes in appropriate temperatures, appropriate heat exchangers must be installed in the circuit the. Isothermal conditions are preferred and the loaded carbon dioxide of towards the bottom of the wash water. The column is preferably near its Flood point operated and the washing solution preferably concentrated in a conventional manner and the resulting caffeine is cleaned.
Preferably, several extraction containers are switched into the circuit, so that the Filling and emptying a container the solvent circuit should not be interrupted got to. The operation which takes place in batches with respect to the solid becomes quasi-continuous nutty. The extraction containers can be passed through in parallel or in succession in a known manner will drive. The interconnection then takes place in such a way that a container for emptying and Filling can be uncoupled.
Several containers have a particularly advantageous effect in that the concentration dissolved ingredients in the solvent remains almost the same, d. H. the washing column works sta tional and the loading of the washing solution can be optimally adjusted. Preferably for the washout uses a packed column made with V4A wire mesh wire helices can be filled. However, it is also possible for the column to be filled with other inserts or even other types of columns are used. These measures represent a mere Optimization according to the prior art. Likewise, the optima for each column values for the volume flows of solvent and washing liquid are determined.
The following example serves to explain the invention.
In der kleineren Anlage wurden jeweils ca. 200 g (lufttrocken) in die Extraktionsbehälter eingefüllt, in der größe ren jeweils ca. 40 kg.Experiments 1 to 5 were carried out in two different sized plants. In the smaller one Approx. 200 g (air dry) were filled into the extraction container, in size around 40 kg each.
A Ceylonese tea (fannings) with a caffeine content of 3.36% by weight in the dry matter and a water content of 6.7% by weight. To the Entcof The tea was moistened to about 20% by weight, but the exact moisture content was not is critical. It can fluctuate between approximately 12 and 50% by weight (DE 38 17 736 A1). From innkeeper For economic reasons, the water content will be kept low. The pressure in the plants was set to 250 bar and the temperature to 60 ° C. As known from DE 36 40 333 C2, the extraction pressures can be 150 to 400 bar, preferably 250 to 350 bar. The Test results are summarized in Table I.
Pressure in the extraction container and in the separation column: 250 bar
Temperature in the extraction container and in the separation column: 60 ° C
Caffeine content of the tea used: 3.36% by weight
Column diameter in experiments 1 to 3: 70 mm
Column diameter in experiments 4 and 5: 200 mm
Experiments 4 and 5 were carried out close to the flood point of the column, the capacity of the pump used in experiments 1 to 3 was too low to reach the flood point.
In experiments 1, 2 and 4, only one container with tea was switched on, while in tests 3 and 5, several containers were connected in series. The even concentration of CO₂ results in the higher concentration of caffeine in the wash solution.
The packing of the columns consisted of V4A wire mesh coils.
From the comparison of the results obtained in the two plants, it can be seen that with increasing size of the system necessary to achieve the desired residual caffeine content agile amount of solvent (relative solvent throughput = amount of solvent per amount of tea or caffeine) decreases. On the one hand, this should be due to the height re fill improved loading and on the other hand to a better ratio of filling amount to the inner surface of the container (problem of edge mobility).
The most important aim of the invention is to improve the aroma impression of the decaffeinated Teas. To do this, the tea samples were tasted and analyzed by some aroma components compared. The decaffeinated teas from experiments 3 and 5, which one realistic production according to the invention come closest, with the starting tea as well compared to a tea (tea "A"), in which the purification of carbon dioxide from caffeine by Adsorption on activated carbon took place (similar to that described in DE 34 15 844 C2). All three decaffeinated samples matched the caffeine and water content, also the drying conditions had been kept the same.
A".The tea samples from experiments 3 and 5 came from the starting tea according to leaf and color (in particular after adding milk according to the tasting rules), as well as according to aroma and taste Starting tea is much closer than "A" decaffeinated tea.
In addition, gas chromatograms of the tea from experiment 5, from tea "A" and from Aus Gangstee added. The individual peaks could not be identified, but were related to the corresponding peaks of the original tea, so that an immediate impression of the Quantity relationships arise.
A total of 44 peaks were evaluated. The comparison between the tea from experiment 5 and tea "A" shows that 29 peak areas are larger, 5 are equal and 10 are smaller. Even without knowing the one individual aroma components say the result (especially together with the tasting which reflects the taste and aroma impression), that in the test tea after Entcof refining quantitatively more aroma components are present than in a conventional Ver drive decaffeinated tea (tea "A"). The results are summarized in Table II.
