Abstract

Caffeine (I)-contg. coffee extracts are decaffeinated as follows: (a) caffeic acid (II) is added to the extract to afford an insol., colloidal (I)/(II) complex; (b) crystals of the (I)/(II) complex are grown; and (c) the insol. crystalline (I)/(II) complex is sepd. from the extract. Step (a). The extract is suitably an extract of green or roasted coffee. (II) may be added as a solid or as an aq. soln. Treatment is pref. 50-95 deg.C, with mol. ratio (II):(I) at least 1:1. Step (b). The mixt. is pref. adjusted to 0-50 deg.C/pl below 4.5 to promote crystal growth.
