noch über Knochenkohle gereinigt. Diese Lösung, »Kochkläre« genannt, wird schließlich
in einem Verkochapparat unter Luftlegere eingedampft bis auf etwa io bis 12 Prozent

Das vorliegende Verfahren vermeidet diese Nachteile, indem- .die Herstellung
der Raffiniade folgendermaßen vorgenommen wird. Von dem im Affinationsprozeß gut
gereinigten Rohzucker wird der größere Teil, etwa 50 bis 70 Prozent,
unmittelbar zu einem feinen Mehl vermahlen und nicht mehr wie bisher einer Lösung
unterworfen. Nur der Rest und insbesondere die groben Mahlrückstände werden dagegen
in einer Maische mit Rührwerk in so viel Wasser gelöst, daß die Lösung bei 6o bis
8o° C gesättigt ist und keine Kristalle mehr ausscheidet. In diese Lösung wird nun
das feine Zuckermehl unter Anwärmung bei guter eingerührt. Dann wird diese Füllmasse
in einen Verkochapparat. gezogen und dort in ganz kurzer Zeit auf die gewünschte
Konzentration und Temperatur gebracht und hierauf zur weiteren Verarbeitung abgelassen.
Der Zucker wird nach diesem Verfahren nur auf so kurze Zeit einer Erwärmung ausgesetzt,
daß ein Gelbwerden vollständig ausgeschlossen ist. Anderseits spart man eine große
Wärmemenge, die nach dem: alten Verfahren zum Eindampfen der Lösungen notwendig
war. Die Erwärmung im Verkochapparat braucht nur so lange vorgenommen zu werden,
biss die Lösung die gewünschte Übersättigung bekommt, die notwendig ist, uni nachher
