Bekanntlich erleidet zu röstendes Gut, insbesondere Kaffeebohnen, während des Röstens gewisse unvorteilhafte Veränderungen, welche, durch die Natur des Röstvorganges selbst hervorgerufen, gewissermaßen unvermeidlich sind. Um diese Zersetzungen des Röstgutes möglichst einzuschränken bzw. zu vermeiden, soll gemäß der Erfindung das Gut in einer von außen erhitzten Rösttrommel während der Röstung unter Unterdruck trockenem, überhitzten Wasserdampf ausgesetzt werden. Gegebenenfalls kann als einleitende Stufe das zu röstende Gut vor l| dem Rösten mit gesättigtem Dampf behandelt werden, um den Feuchtigkeitsgehalt aller Gutteile, namentlich bei Mischgut, auf gleiche Höhe zu bringen und demgemäß den Röstvorgang gleichmäßiger zu gestalten. Das Rösten erfolgt in' einer geschlossenen, drehbaren Trommel, die in beliebiger Art beheizt wird und Mittel besitzt, die dem anzuwendenden Dampf den Eintritt und das Durchstreichen der Röstgutschicht gestatten. Die Vorbehandlung des Gutes mit gesättigtem Dampf kann in derselben Trommel stattfinden. Kaffeebohnen, und Erwärmung der Trommel überhitzter Dampf unter Unterdruck zugeleitet wird, dessen Temperatur man auf ungefähr 230 bis 250° ansteigen läßt. Vorher kann das Röstgut in derselben Trommel oder in einer anderen Vorrichtung der Einwirkung von gesättigtem Dampf zwecks Aufschließung Erwärmung und gleichmäßiger Durchfeuchtung ausgesetzt werden. Die Druckminderung in der Rösttrommel während der Einleitung des überhitzten Dampfes findet allmählich statt. Der Zweck dieser Zuführung überhitzten Dampfes ist ein vielfacher. Einmal dient der Dampf als Wärmeyermittler innerhalb der Kaffeebohnen, da die wärmevermittelnde Wirkung der Luft durch die Absaugung dieser ausgeschlossen ist.
