Description
Method of regulating the cooking time in continuous cooking of fish masses in a flow cooker The invention relates to a method to regulate the cooking time when continuously cooking fish masses in one Flow cooker and relates to a cooking process in which the fish masses after Cooking in oil containing water and solid components are separated, whereby the solid components can be freed from the press water in a press.
When cooking fish for oil production, it is useful to adjust the cooking intensity to regulate the tissue cells of the fish mass after cooking up to one certain degrees are resolved. If the fish mass is too much dissolved by cooking contains the water or oil that is subsequently removed from the fish mass in filters, Pressing or centrifuging separates too much sludge. Will against it the fish mass is not cooked enough, it clogs the filters, presses or centrifuges, so that the process can be interrupted at short intervals to clean the equipment got to. Fish that is not fresh has already been affected by enzymatic and bacterial influences underwent a certain degree of dissolution. To dissolve through cooking not to drive too far, such fish is to be cooked at low intensity. From it it follows that the degree of boiling depends on the condition of the raw material Must be adjusted if a cooked fish mass is to be obtained that is properly prepared for treatment in the downstream separation facilities.
The object of the invention is to solve this problem while continuing To solve cooking of fish, by means of a method of regulating the cooking intensity. The method is of particular interest where cooking is done in stoves will that at any point of cooking with an unchanged amount of fish mass be charged. The fish is cooked in water containing oil and in solid components separated. The solid components are in a press of further water, the so-called press water, freed.
According to the invention, the cooking time of the fish mass is regulated in that with a constant amount of fish supplied, a corresponding, the each required residence time of the fish mass in the cooker regulated mass on The water obtained from the fish mass is added to the cooker together with the fish mass will.
The water obtained from the fish mass is preferably the Feeder inlet after it has been freed from oil and other solid matter is. This is particularly important when in itself to regulate the Cooking time that separated from the solid components separated out after cooking Water is used but is insufficient for adequate regulation, so that separated cooking water containing oil is fed into the cooker got to. Solid constituents separated from the water can also enter the digester inlet be fed back.
The invention is illustrated using an exemplary embodiment with reference to the drawings explained in more detail, the schematically a system for the implementation of the invention Procedure shows.
For the sake of simplicity, the pumps in the various pipelines required for the system to work are not shown. The continuously operating cooker 1 can have a cylindrical shape and rotate about a horizontal axis. It is provided with facilities for indirect heating of the fish mass, e.g. B. with pipes that run parallel to the axis of rotation of the cooker and that are flowed through by a fuel gas from an oil burner or by steam. The inlet 2 of the cooker has a smaller diameter than the outlet 3. Due to the difference in level between the lower edges of the inlet and the outlet, the fish mass flows through the cooker as it rotates. Meanwhile, the cooker holds a predetermined amount of charged material at all times. The rotation of the cooker ensures even cooking and an even movement of the mass through the cooker. The bottom fish mass is fed to the digester inlet 2 at 4 and conveyed into the interior of the digester, preferably by means of a screw conveyor arranged in the inlet 2. The fully cooked fish mass is withdrawn through the outlet 3 and collected by a device 5, which can consist of a fixed outlet connected to the seals of the rotating outlet 3. The fish mass is pumped from the device 5 through a line 6 and a valve 7 arranged in it to a centrifuge 8 which is provided with a scraping device 9 in the form of a conical screw conveyor, which separates the solid components from the fish mass. The solid components are conveyed through an outlet 10 to a screw press 11. The solid components coming out of this press are drawn off at 12 in order to then be ground and dried for the production of fish meal suitable as animal feed. The centrifuge 8 can also be carried out by e.g. B. a filter can be replaced. The so-called press water is discharged from the press 11 through a line 13 with valves 14 and 15. The line 13 opens into the device 5. It is also provided with two branch lines 16 and 17 which have valves 18 and 19 . The line 16 opens into the digester inlet 2, while the line 17 is connected to the line 6. The water containing the oil separated in the centrifuge 8 is fed through a line 20 to the centrifuge 21. The oil separated there leaves the centrifuge 21 through an outlet 22, while the separated solid constituents are discharged through an outlet 23. The solid constituents are expediently completely fed to the digester inlet 2 in order to obtain them in the press 11 in a more largely water-free state. The separated oil-free water, so-called glue water, is discharged from the centrifuge 21 through the line 24 with the valve 25. A line 26 branches off from the line 24 and opens into the digester inlet 2. The valve 27 is arranged in the line 26.
The operation of the system is described in more detail using the following example. When the cooking process begins, valves 18 and 19 are open and valves 7, 14 and 15 kept closed. The fish mass is introduced into the cooker 1, cooked in it, causing it to flow in a circle until the desired Cooking temperature, e.g. B. 90 to 95 ° C is reached. The valve 19 is then closed and valves 7, 14 and 15 open. During a normal workflow 1500 kg of sandeel introduced into the cooker per hour. The supply of the press water from the press 11 to the inlet of the digester 1 by means of the valves 15 and 18 regulated in such a way that if the cooking intensity is too high, more press water is fed to the digester inlet and vice versa. Since the amount of charging in the Kocher is always constant, an increased supply of press water leads to an increase the amount of the feed flowing through the digester per unit of time with itself and consequently a reduction in the average time during which the fish mass is in the cooker. The rest of the press water goes to the outlet of the digester and conveyed to the centrifuge 8 together with the cooked fish mass. If the amount of press water received from the press 11 is insufficient, the centrifuge can do this to reduce the cooking intensity to the desired value 21 incoming glue water can be used. By regulation by means of the valves 25 and 27 a desired amount of glue water can be pumped to the digester inlet will.
The oil withdrawn from the centrifuge 21 contains practically no water. Contain the sludge and glue water also removed by the centrifuge 7% dry matter and 0.3% oil. The above-mentioned fish meal contains in dry Condition 10% water and 5.3% fat. The fat yield is in the form of pure separated oil 80 to 85% calculated from the fat content in the raw material. Of the The rest of the fat is in the fish mill and the glue water. The glue water is expediently evaporated, and the content of the fat in the glue water remains in the evaporation residue mixed into feed for animals. The specified values apply equally to others, with minor deviations Fishes.
The advantage of the method lies in the following: The greatest difficulties of the method occur in the centrifuge 21. If the raw material is too much dissolved by boiling, the water supplied to centrifuge 21 through line 20 will contain too much fine sludge. In this case it may be necessary to empty the centrifuge of the sludge about every 5 minutes. If, on the other hand, press water and / or glue water are returned to the cooker inlet under otherwise similar conditions, it is possible, through the regulation of the boiling intensity achieved in this way, to let the centrifuge 21 work for about 45 to 50 minutes before it becomes necessary again to discharge the To empty the sludge.
