KAISERLICHESIMPERIAL
PATENTAMT.PATENT OFFICE.
Das Anfüllen der Vacuumkochgefäfse mit Zuckersaft geschieht bekanntlich durch ein verhältnifsmäfsig weites Rohr, damit die beträchtliche Masse in möglichst kurzer Zeit in das Kochgefäfs eingeführt werden kann. Dasselbe Rohr wird nun Allgemein und ausnahmslos auch zur Einleitung der Nachziehsäfte während des Kochens benutzt, die immer nur in geringen Mengen, entsprechend der Verdampfung des in der Zuckermasse enthaltenen Wassers, nachgezogen werden sollen. Da aber das Ventil des weiten Füllrohres eine ebenfalls weite Durchlafsöffnung besitzt, so kommt es häufig vor, dafs es zwecks Nachziehens der Säfte zu weit geöffnet wird und dafs dadurch eine zu grofse Menge dünnerer Säfte in die eingedickte Masse eingeleitet wird, die sich mit letzterer nicht mischt, sondern als zusammenhängendes Ganzes von geringerem specifischen Gewicht in ihr aufwärts steigt und als Schicht sich über der Kochmasse lagert. Diese Schicht dünneren Saftes bildet sodann neues Korn, das sogen. Feinkorn, welches aber auf das strengste vermieden werden mufs. Ein weiterer Grund der Nichtmischung liegt noch darin, dafs bei geringer Oeffnung des Ventils die Säfte sich nur sehr langsam in dem weiten Rohr vorbewegen und mit sehr geringer Geschwindigkeit in das Kochgefäfs eintreten. Um nun einerseits das Nachziehen gröfserer Mengen Saftes auf einmal unmöglich zu machen, andererseits aber die Einströmungsgeschwindigkeit der Nachziehsäfte in die Kochmasse zu erhöhen und ihre gute Vertheilung in letzterer zu erzielen, ist folgende Einrichtung getroffen. Es ist aufser dem weiten Anfüllrohr noch ein zweites engeres Röhr mit entsprechend kleinerem Ventil angeordnet, durch welches das Nachziehen der 'Säfte stattfindet. '; Dieses Naehziehrohr endigt am Boden des Vacuumkochgefäfses in einer polygonalen oder" ringförmigen Mündung von verhältnifsmäfsig kleinem oder schmalem Querschnitt, durch welche der Saft in der Fläche der Mündung oder der Mündungen nach allen Richtungen hin in die eingedickte Zuckermasse eintritt, und zwar mit einer bemerkenswerthen Heftigkeit, die im Zusammenwirken mit der allseitigen Ausbreitung und Feinheit des Strahles zur Folge hat, dafs die Säfte gleich nach ihrem Eintritt in die dickere bewegte Masse in dieser äufserst gleichmäfsig und fein vertheilt werden und sich innig mit ihr mischen.As is well known, the vacuum cooking vessels are filled with sugar juice through a relatively wide pipe so that the considerable mass can be introduced into the cooking vessel in the shortest possible time. So kann man das Rohr f selbst mit Schlitzen oder Löchern versehen, von denen erstere jedoch vorzuziehen sein dürften, und das mit ihnen ausgestattete Rohrende in geradem oder gebogenem Zustande an der Stelle anordnen, wo die Ausströmung der Nachziehsäfte erfolgen soll.
