Vorversuche haben ergeben, dass solche nebenmineralarmen Schichtsilicate die negativen Effekte auf der Ultrafiltrationsmembran verringern können. Überraschenderweise führt hier die Vermahlung auch zu einer besseren Eiweißbindung.
- (b) Eine weitere Möglichkeit, die erfindungsgemäßen Schichtsilicate bzw. Adsorptionsmittel herzustellen, ist die Vermahlung mit nachfolgender Sichtung. Hierbei handelt es sich um einen Prozess, bei dem das Grobgut aus dem Material entfernt wird. Es wurde gefunden, dass das feingesichtete Material ein wesentlich besseres Verhalten zeigt, obwohl der Gehalt an Nebenmineralien ggf. röntgenographisch innerhalb des Meßfehlers gleich ist.
- (c) Ein drittes Verfahren besteht in der sogenannten Nassaufreinigung. Bei diesem Verfahren wird eine nasse Suspension in einem Hydrozyclon aufgearbeitet, um das Grobgut zu entfernen. Anschließend wird das Produkt vorzugsweise getrocknet, vorgemahlen sowie ggf. noch granuliert.

(Kolloidal) Trübstoffgehalt durch Behandlung mit dem vorstehend definierten Adsorptionsmittel entfernt worden ist. - e) Klärung und Stabilisierung mit Hilfe von Zusatzstoffen, insbesondere dem erfindungsgemäßen Adsorptionsmittels mit mindestens einem smektitischen Schichtsilicat wie hierin definiert, Gelatine und/oder Kieselsol, sowie gegebenenfalls anderen Behandlungsmitteln wie z. B. Aktivkohle, Behandlungsmitteln auf Proteinbasis (Enzymen), Absorberharzen, PVPP (zur Entfernung von störenden Polyphenolen) und/oder Kieselgelen. Dabei erfolgt sie Zugabe vorzugsweise zu dem rohen Fruchtsaft, insbesondere innerhalb von wenigen Minuten. Bevorzugte Varianten des Verfahrensschritts e) sind:
- e1) Zugabe des erfindungsgemäßen Adsorptionsmittels, insbesondere des mindestens einen smektitischen Schichtsilicats wie hierin definiert, vorzugsweise als erster Zusatzstoff. B. über konventionelle Filtersysteme wie Kieselgurfilter, Schichtenfilter, Kerzenfilter oder Modulfilter, vorzugsweise mit Hilfe von Ultra- und Mikrofiltration, zur Gewinnung eines geklärten bzw. stabilisierten Fruchtsaftes. Das erhaltene Permeat kann gegebenenfalls durch Zugabe von Wasser und erneute Filtration zur Gewinnung von im Permeat vorhandenem Extrakt ”ausgesüßt” werden.

Klärung und Stabilisierung mit Hilfe des erfindungsgemäßen smektitischen Schichtsilicats (Bentonit), Gelatine und Kieselsol sowie Aktivkohle und PVPP zur Entfernung von störenden Polyphenolen und Trübstoffen. Die unterschiedlichen Additive werden innerhalb weniger Minuten dem rohen Fruchtsaft zugegeben, die üblichen zugegebenen Mengen liegen jeweils zwischen 1 und 500 g pro Hektoliter (hl) Fruchtsaft und sind dem Fachmann geläufig. Der erfindungsgemäße Bentonit wird als erstes zugegeben. Die Hauptfunktion des Bentonits besteht in einer Entfernung von Proteinen, die von den Früchten stammen. Hier zeigte sich, dass bei dem erfindungsgemäßen Bentonit 2, verglichen mit dem unbehandelten Bentonit und dem kommerziellen Vergleichsprodukt, eine geringere bis gar keine Beschädigung der Ultrafiltrationsmembranen eintrat. Somit ist sowohl die Wirksamkeit des entsprechenden Bentonits verbessert, als auch die Einsatzfähigkeit ohne Beschädigungen in einem großtechnischen Prozess ganz erheblich vorteilhafter.
