Abstract
The method of heat sterilization of spices with subsequent return of aromatic substances is that the spices are placed in a heated and hermetically sealed space. Gradually, the temperature rises to 90 to 130 degC, thereby releasing water and the aroma present in the form of steam from the spices. This mixture is cooled to form a liquid condensate and drained outside the sterilization space. The condensate is returned to the cooled sterilized pepper after the heat sterilization has ended.
Description
Způsob tepelné sterilizace koření s následným návratem aromatických látekMethod of heat sterilization of spices with subsequent return of aromatics
Oblast technikyTechnical field
Vynález se týká způsobu tepelné sterilizace koření s následným návratem aromatických látek. The invention relates to a process for heat sterilization of spices with subsequent return of flavorings.
Dosavadní stav technikyBACKGROUND OF THE INVENTION
Spices are an essential part of food products and daily diet. Most species are usually imported from their countries of origin, most often from Asia. The actual harvesting and drying of herbs or their seeds takes place in the wild and the spice is contaminated by various microbial flora. Some microorganisms are region specific and the local population is partially immune to them. After exporting contaminated spices to Europe, this microflora is very dangerous for the local population and causes health problems. Most types of spices are processed in the preparation of dishes so that the spices are cooked with the food and so this microflora is destroyed. However, there are types of spices that do not undergo heat treatment and are used directly to flavor the finished dish. An example is pepper.
Microbial decontamination of the root is very difficult. Spices contain aromatic chemicals that are volatile. Without these substances, the spice loses its meaning and is worthless. To date, a method for decontaminating microorganisms by direct irradiation of spices, for example by ionizing radiation, has been commonly used. Following the introduction of an obligation in the EU to label such treated spices and inform consumers about their exposure, a problem has arisen. Most Europeans consider radiation to be harmful and lose confidence in irradiated products. Importers cease to irradiate the spices and only check acceptable microflora values by microbial analysis. Spices must be excluded from sale if higher levels of micro-organisms are present which could endanger the health of consumers. Another decontamination method used is steam steaming of the spices and subsequent drying. However, this technology is not advantageous in terms of partial loss of flavorings. The equipment and operation are also expensive and burden the final price of spices.
Podstata vynálezuSUMMARY OF THE INVENTION
Postupně od pokojové teploty se zvyšuje /The aforementioned drawbacks are overcome by the method of thermal sterilization of spices with the subsequent return of the flavorings according to the invention, which is based on the fact that the spices are placed in a heated and hermetically sealed space. Gradually from room temperature increases /
Kondensát je po skončení tepelné sterilizace opětovně vrácen do vychladlého sterilizovaného koření.a temperature in the range of 90-130 ° C, whereby water and flavorings present in the form of steam are released from the spices. This mixture is cooled to the form of a liquid condensate and removed outside the sterilization space. The condensate is returned to the cooled sterilized spice after the heat sterilization.
Koření se stane tímto procesem pro spotřebitele bezpečné a neztratí svojí aromatickou hodnotuAn advantage of the process according to the invention is that most microorganisms are removed and their total amount is substantially reduced. Spices will become safe for consumers and will not lose their aromatic value
Příklad provedeníExemplary embodiment
Do sterilizačního prostoru se nasypou semena černého pepře a prostor se hermetickyBlack pepper seeds are poured into the sterilization chamber and hermetically sealed
Ύ uzavře. Nastaví se ohřev na 90PC. Semena pepře jsou v prostoru neustále míchána. Teplo Λ přechází pozvolna z teplosměnné plochy do semen pepře. Heating is set to 90PC. Pepper seeds are constantly mixed in the space. Heat Λ passes slowly from the heat exchange surface to the pepper seeds. Seed temperature is measured at several points in the enclosure. The excreted water in the form of steam together with the flavorings condenses on a cooler located in the upper part of the space. The temperature of the cooler is + 4 to - 4 ° C. The condensate is collected into a tank, which is located under the cooler outside the sterilization area and is also cooled. When the set temperature in the seeds is reached, time is measured. After 60 minutes the seeds are pasteurized. The active form of microorganisms is killed, only seeds (microorganisms) survive in the seeds. If only the pasteurization temperature is sufficient to treat the seeds, the process may be stopped at this stage, the seeds cooled to 40 b C and the pasteurized condensed water with flavorings returned to the seed mass. Homogenization of the seed mass with pasteurized condensate is usually carried out within 30 min. mixing together.
U semenIf the pasteurization temperature is insufficient, pepper seeds can also be sterilized. After 60 minutes holding time at 90 ° C, the heating temperature is increased to 124 i 'C. U semen
An essential aromatic component of pepper seeds is piperine, with a melting point of 125-127 ° C. Once the set temperature has been reached in the pepper seeds, the time is measured. The total sterilization time varies from 1 to 3 hours, depending on the magnitude of the microbial contamination. When sterilization is complete, the entire chamber is cooled and homogenized with sterile condensate for 30 min when the seeds are at 40 ° C. mixing together. The sterilized pepper seeds are free from sporulates and the spices can be considered sterile. Its sensory properties are practically the same as before the heat treatment. This technological treatment procedure removes complete microflora such as bacteria, yeasts, molds and their germs (spores).
