Abstract
The invention relates to camel milk powder and a preparation method thereof. The camel milk powder comprises the following raw materials in parts by weight: 200-250 parts of fresh camel milk, 10-30 parts of glucose, 10-30 parts of lactose oligosaccharide, 20-50 parts of whey protein, 3-7 parts of whole wheat dietary fiber, 0.8-1.2 parts of lecithin, 0.1-0.3 part of vitamin A, 0.3-0.4 part of vitamin D, 0.15-0.2 part of vitamin E and 0.1-0.2 part of whey calcium. According to the method, on the basis of the existing conventional preparation of camel milk powder, the adsorption step of biomass charcoal is added, so that the content of biomass alkali is effectively reduced, the bitter and fishy smell of the camel milk powder is obviously reduced, and the taste is better. Simultaneously, biomass alkali can be adsorbed in the biomass charcoal more stably by modifying the biomass charcoal, because aluminum sulfate and ferric phosphate enable the biomass alkali to form a more stable complex on the surface of the biomass charcoal.
Description
Technical Field
The invention relates to camel milk powder and a preparation method thereof.
Background
The camel milk has rich nutrition, low fat content and easy digestion, and is an ideal animal edible drink. The protein content in camel milk is higher than that of milk by more than 3.5%, and the milk fat content is also higher than 6.5%. The camel milk is easy to digest, quick to absorb and stomach-invigorating. The heat content is higher than that of milk, and the milk contains abundant vitamins B1, B2 and C and enough nutrients such as calcium, iron and zinc. The content of vitamin C in camel milk is 3-4 times that of equivalent cow milk, and the insulin content of camel milk is more than 3 times that of equivalent cow milk. In addition, the calcium content of the camel milk is higher than that of cow milk, and the camel milk also contains a large amount of unsaturated fatty acids and B vitamins required by human bodies; the content of iron element is 8 times of that of cow milk. Proved by the fact, the camel milk has good effect on feeding infants, can promote digestion and absorption of intestines and stomach, and can strengthen the body and whiten and lubricate the skin after long-term drinking. Meanwhile, camel milk can treat edema, rheumatism, allergic purpura, dyspepsia and the like. The camel milk can be used for processing traditional dairy products such as milk skin, milk curd, butter and the like, and according to analysis, the camel milk contains casein, lactoferrin, immunoglobulin, vitamins, minerals, fatty acids, amino acids and various bioactive substances. The chemical composition of camel milk is affected by various factors such as camel variety, age, health condition, season, climate, grassland quality, forage supplement, drinking water, management, etc.
The main food of the camel is the prismatic grass, the thorn, the euphorbia lathyris or the reed and the like in the desert or semiarid areas, and the food usually ensures that the camel milk contains a certain amount of alkaloids, namely an organic matter of an azacyclic ring, has alkalinity and specific physiological activities, most of alkaloids have bitter taste and even have certain pungency, and the camel milk has certain bitter taste, so that the taste of the camel milk after processing is influenced to a certain extent.

The method for alkaloid content comprises the following steps:
for the defatted camel milk in the first step, an alkaloid extraction method commonly used in the art, such as an aqueous solution extraction method, an organic solvent extraction method, a percolation extraction method, a supercritical fluid extraction method, and the like, may be used, and since the present application is a defatted camel milk, an alcohol solvent extraction method is used, wherein a 75% ethanol solution is used as an extractant. Table 1 shows the alkaloid content of the camel milk after degreasing of examples 1-3 and comparative examples 1-3.
TABLE 1
Alkaloid content (mg/kg) | |
Example 1 | 0.39 |
Example 2 | 0.31 |
Example 3 | 0.26 |
Comparative example 1 | 0.85 |
Comparative example 2 | 0.67 |
Comparative example 3 | 0.56 |
Comparative example 4 | 0.53 |
Since comparative examples 1 to 4 used the same conditions as in example 3, it was confirmed by comparing comparative example 1 with examples 1 to 3 that the biomass content in the modified biochar-treated defatted camel milk was significantly reduced. By comparing the comparative example 1 with the comparative examples 2, 3 and 4, it can be determined that the modified or unmodified biomass charcoal has an effect of reducing alkaloids in the defatted camel milk, and the modified effect is more obvious; comparing comparative examples 1-4 with example 3, it was determined that the effect of reducing alkaloids in skim camel milk by aluminum sulfate and ferric phosphate modified biomass charcoal was most pronounced.
The protection scope of the present invention is not limited to the above embodiments, and all technical solutions belonging to the concept of the present invention belong to the protection scope of the present invention. It should be noted that modifications and adaptations to the present invention may occur to one skilled in the art without departing from the principles of the present invention and are intended to be within the scope of the present invention.
