Abstract

Cochineal pigment is an anthraquinone natural pigment extracted from cochineal, and the color of carminic acid colorant can range from orange yellow to red to purple according to different pH values, so that the cochineal acid colorant is an excellent colorant for food, cosmetics, medicines and textiles, and is only one natural pigment which is allowed by FDA to be used for food, medicines and cosmetics. However, the maximum wavelength fluctuation range of the color of the carminic acid product is wide under different pH values, so that the application field of the carminic acid is limited. In order to solve this problem, CN101061185A, CN 101461513A, CN101475756a produces carminic acid aluminum calcium lake, which is a chelate lake compound formed by combining carminic acid with aluminum ions and calcium ions, and the lake is a product obtained by reacting carminic acid with aluminum ions and calcium ions under an aqueous condition.

Therefore, there is an urgent need to develop a method for preparing an aluminum-free cochineal red lake.

Example 1
2.1g carminic acid was dissolved in 20ml water, and 3.3g whey protein was added to 30ml water and dissolved with heating and stirring. Then carmine solution was added and the temperature was raised to 85-95 c and whey protein solution was slowly added.
