Description

Health wine for improving immunity and preparation method thereof
Technical Field
The invention belongs to the technical field of deep processing of fermented wine, and particularly relates to health-care wine for improving immunity and a preparation method thereof.
Background
Yellow wine is one of the oldest wines in the world, is a unique wine variety in China, has a long history and enjoys the reputation of 'national wine' in the world. In the traditional yellow wine brewing, rice, husked millet, corn and wheat are mainly used as main raw materials, and the brewed wine is prepared by steaming, yeast adding, saccharification, fermentation, squeezing, filtering, wine decocting, storage and blending, generally has the alcohol content of 3-20%, belongs to low-alcohol brewed wine, is low in alcohol content, mellow in taste and unique in flavor, and is always popular with health-care and health-preserving people. The yellow wine has wide production area, various varieties and rich nutrition, and contains protein, carbohydrate, amino acid, vitamin, trace elements, various organic acids, ester substances and active ingredients.
With the development of economy and the improvement of the living standard of people, people pay more and more attention to the functions of food such as safety, nutrition, health care and the like, and the traditional yellow wine cannot meet the health care requirements of human bodies. Therefore, the development of novel health-care yellow wine by improving the formula and the process and adopting an innovative process to optimize fermentation is a hot trend of the current research. In the development of the novel health-care yellow wine, the innovation mainly comprises two aspects: on the one hand, the innovation of main raw materials is that other grain crops are added from the traditional glutinous rice, husked millet and the like, such as: grain crops such as corn, black rice, oat, potato, tartary buckwheat and the like; and health-care components with traditional Chinese medicine components such as kudzu root, rhodiola rosea, medlar, hawthorn, sea cucumber and the like are added; on the other hand, optimization of fermentation strains and optimization of fermentation conditions are essential. In recent years, although there are many health-care fermented wines, due to reasons of ingredients and production processes, raw materials are not fully utilized, and functional components depend on blending, so that the immunity-improving effect of the fermented wines is not ideal or is not a fermented wine in a strict sense.
Therefore, the development of the health care type fermented wine capable of improving the immunity has important practical significance for the development of novel health care yellow wine.
