Detailed Description
The method for preparing the preserved chaenomeles speciosa comprises the following steps:
A. preparing raw materials: cleaning nine-part cooked papaya without rot and diseases and insect pests, and adding white sugar, sodium carbonate, sodium lactate, acidic or neutral cellulase and salt.
B. Slitting: firstly, a hole is punched on the melon strips by using a puncher, and then the pawpaw is cut into the melon strips.
C. Removing seeds: removing seeds and pulp from the melon strips, and adding acidic or neutral cellulase; the adding amount of the acidic or neutral cellulase is 0.04 wt% of the mass of the pawpaw.
D. Peeling: removing seeds, pulp and exudate, drying in the sun, and removing peel with a pawpaw peeler.
E. Slicing: cutting the melon strips into melon slices with certain thickness.
F. And (3) acidity adjustment: adding sodium carbonate to adjust acidity; the addition amount of the sodium carbonate is 5 wt% of the mass of the pawpaw.

I. and (5) drying.
2. The method for making the shine skin papaya preserved fruit according to claim 1, wherein in step B: the adding amount of the acidic or neutral cellulase is 0.02 wt% -0.04 wt% of the mass of the pawpaw.
