Abstract
本发明公开了保健牛排及其制备方法,所述牛排腌制的调料包含如下重量份计的原料:纳豆酱40‑60份、山药粉10‑15份、黄芪提取物5‑10份、枸杞粉3‑7份、蛹虫草粉3‑5份、松针提取物3‑5份、姜黄素1‑3份、植物甾醇3‑5份、茶油5‑10份、红酒10‑15份、黑胡椒粉3‑5份、香辛料2‑4份、大蒜2‑4份,本发明额保健牛排的腌制采用滚揉的方式对切片后的牛排进行腌制,或对牛排采用注射腌制‑切片‑二次腌制的方式进行腌制,以提高牛排的腌制效果,然后再经过超高压处理。本发明所制得的牛排不仅口感细腻,而且对人体具有一定的保健功能。

本发明涉及牛排加工技术领域,尤其涉及保健牛排及其制备方法。
背景技术
随着社会的发展,人民对物质文化生活的追求越来越高,“食”作为我们日常生活中重要的组成部分,在消费水平提高之后,对于“食”的要求不仅使以前的温饱和果腹,而是越来越追求高品质的饮食和色香味俱全的食物。牛肉肉质细嫩,滋味纤维,适合多种烹调方法,并且富有营养,有滋补养身的作用。牛肉含有丰富蛋白质的含量比例较高,种类多,而且消化率高,很容易被人体吸收利用,有增强体力,强壮身体的作用,另外其也含有对人体生理发育有重要作用的磷脂类,是中国人膳食结构中的脂肪和磷脂的重要来源之一。

基于背景技术存在的技术问题,本发明提出了保健牛排及其制备方法,所制得的牛排不仅口感细腻,而且对人体具有一定的保健功能。
本发明提出的保健牛排及其制备方法,所述牛排腌制的调料包含如下重量份计的原料:
纳豆酱40-60份、山药粉10-15份、黄芪提取物5-10份、枸杞粉3-7份、蛹虫草份3-5份、松针提取物3-5份、姜黄素1-3份、植物甾醇3-5份、茶油5-10份、红酒10-15份、黑胡椒粉3-5份、香辛料2-4份、大蒜2-4份。
优选地,所述牛排腌制的调料包含如下重量份计的原料:
纳豆酱50份、山药粉12份、黄芪提取物8份、枸杞粉5份、蛹虫草份4份、松针提取物4份、姜黄素2份、植物甾醇4份、茶油8份、红酒12份、黑胡椒粉4份、香辛料3份、大蒜3份。
优选地,所述植物甾醇为β-谷甾醇、豆甾醇、菜油甾醇和菜籽甾醇中的一种或几种。
本发明提出的一种上述所述的保健牛排的制备方法的步骤如下:
S11:原料的预处理:将冷冻牛肉进行低温解冻2-6℃,修割去除解冻后的牛肉的表面及内部的大块脂肪、淤血及筋膜;
S12:将所述S11中预处理后的牛肉进行切片处理,每片牛肉的厚度为8-15mm,重量为120-160g/片;
S13:排酸:将所述S12中切片后的牛肉进行悬挂排酸8-12h;
S14:滚揉腌制:将所述S13排酸后的牛肉与腌制的调料混合后滚揉5-15min,然后静置腌制4-8h;
S15:预冻:将S14中滚揉腌制好的牛肉先进行真空包装,然后再将真空包装后的牛肉放入冷冻室进行预冻处理;
S16:超高压处理:将所述S15预冻处理后的牛肉进行超高压处理;
S17:包装入库:将S16超高压处理后的牛肉进行外包装,然后喷印生产日期后装箱入库。

S23:充填滚揉:将调料与冰水混合后,通过注射机将混合液注射到所述S22排酸后的牛肉中,轻轻拍打2-4min后,将处理后的牛肉放入滚揉机中滚揉3-6min;
S24:切片腌制:将所述S23滚揉后的牛肉进行切片,每片牛肉的厚度为8-15mm,重量为120-160g/片,然后再在牛肉表面刷一层S23所述的混合液,继续滚揉2-4min,然后静置4-8h进行腌制;
S25:预冻:将S24中滚揉腌制好的牛肉先进行真空包装,然后再将真空包装后的牛肉放入冷冻室进行预冻处理;
S26:超高压处理:将所述S25预冻处理后的牛肉进行超高压处理;
S27:包装入库:将S26超高压处理后的牛肉进行外包装,然后喷印生产日期后装箱入库。
优选地,所述滚揉为真空滚揉,其条件为:真空度为-0.08MPa、滚揉速度8-10r/min、环境温度5-15℃。
优选地,所述预冻处理后牛肉中心温度为-10--20℃。
优选地,所述超高压处理的条件为:200-300MPa条件下保压5-15min,升压速度为在20-30s内完成升压。
优选地,所述S14中的调料按100-200g/kg添加。
优选地,所述S23中调料与冰水的质量比为10-20:100,所述冰水温度2-6℃,所述混合液按5-10ml/kg进行注射。
作用机理:
纳豆酱不仅保有黄豆的营养价值、富含维生素K2、提高蛋白质的消化吸收率,更重要的是发酵过程产生了多种生理活性物质,具有溶解体内纤维蛋白及其他调节生理机能的保健作用;可以预防便秘、腹泻等肠道疾病,提高骨密度,预防骨质疏松,还可以双向调节血压,溶解陈旧血栓斑块,调节血脂,能消除疲劳,综合提高人体免疫力。
山药粉的主要有效成分为薯蓣皂甙及其甙元薯蓣皂素,还含止杈素、3,4-二羟基苯乙胺、甘露聚糖、植酸、多巴胺、山药碱、槭素Ⅱ、胆甾醇、麦角甾醇、菜油甾醇、β-谷甾醇、尿囊素、山药素Ⅰ等,具有健脾、补肺、固肾、益精、降血脂预防心血管、抗炎保肝等作用。
黄芪甘,微温;归肺、脾、肝、肾经;黄其提取物的具有增强免疫力,增强能量,抗疲劳,抗突变,保肝,抑制破骨细胞的作用,其主要成分包括黄芪多糖和黄芪甲苷,其中黄芪多糖具有降血脂,即降低胆固醇和甘油三酯、升高高密度脂蛋白的作用;能够预防和治疗心脑血管疾病,如动脉粥样硬化、冠状动脉病变、周围血管病变以及高脂血症等。黄芪甲苷具有显著降低血糖、糖化血红蛋白和尿蛋白的作用,可降低肾皮质和血清中的AGEs,显示黄芪甲苷具有抗氧化作用,并对醛糖还原酶有抑制作用,还有抑制系膜细胞增生、减轻肾脏肥大的作用。
枸杞甘,平;枸杞粉中主要包含枸杞多糖、甜菜碱和枸杞色素,其中枸杞多糖具有促进免疫、抗衰老、抗肿瘤、清除自由基、抗疲劳、抗辐射、保肝、生殖功能保护和改善等作用;甜菜碱具有促进脂质代谢或抗脂肪肝的效果,在体内起甲基供应体的作用;枸杞色素主要包括-胡萝卜素、叶黄素和其他有色物质,具有提高人体免疫功能、预防和抑制肿瘤及预防动脉粥样硬化等作用。
蛹虫草中的虫草多糖和SOD等多种生物活性物质的药用价值最为显著。虫草酸可以显著地降低颅压,促进机体新陈代谢,因而使脑溢血和脑血栓病症得到缓解。虫草素是一种具有抗菌活性的核苷类物质,对核多聚腺苷酸聚合酶有很强的抑制作用。在DNA转录mRNA过程中使mRNA成熟障碍,抑制癌细胞的生长。并有降血糖的作用。虫草多糖是一种高度分枝的半乳甘露聚糖,它能促进淋巴细胞转化,提高血清IgG的抗体含量和机体的免疫功能,增强机体自身抗癌抑癌的能力。SOD可以消除机体内超氧自由基,具有抗衰老、抗癌抑癌的作用。此外,蛹虫草还含有丰富的硒,这种微量元素已被大家公认是人体必需的微量元素,是谷胱甘肽过氧化酶的活性中心,以硒半胱氨酸的形式连接在酶蛋白的肽链上,保护细胞膜的稳定性的正常的通透性,并刺激免疫球蛋白和抗体的产生,增强机体免疫和抗氧化能力。
松针提取物具有强抗氧化剂,能有效清除自由基、预防和治疗动脉硬化症、高血压、高脂血症、高粘血症、高聚血症、降低冠心病、心绞痛、心律失常的发病几率、糖尿病的辅助治疗、预防脑梗塞、脑动脉硬化症、老年痴呆症、突发性耳聋、抗衰老物质,能够很好地改善老年人的健康状况、抗基因突变作用和DNA损伤作用等功效。
姜黄素具有降血脂、抗凝、抗氧化、利胆、抗癌等作用。
植物甾醇对人体具有较强的抗炎作用,具有能够抑制人体对胆固醇的吸收、促进胆固醇的降解代谢、抑制胆固醇的生化合成等作用;用于预防治疗冠状动脉粥样硬化类的心脏病,对治疗溃疡、皮肤鳞癌、***等有明显的疗效;可促进伤口愈合,使肌肉增生、增强毛细血管循环;还可作为胆结石形成的阻止剂。
茶油中含有丰富的油酸和亚油酸,其中的不饱和脂肪酸含量占90%以上,在食用后容易被人体吸收,同时还能促进人体对脂溶性纤维及钙、铁、锌等微量元素的吸收,茶油能使血液中胆固醇的浓度降低,这样可以防止动脉硬化,抑制和预防冠心病、高血压等心脑血管疾病。
与现有技术相比,本发明的有益效果是:
(1)本发明制得的牛排不仅口感细腻,而且对人体具有一定的保健功能;
(2)本发明的牛排在腌制的调料中加入的各种中药具有相互协同的效果,有效的提高了牛排对人体的保健功能,具有降血脂、降胆固醇、提高人体免疫力等功效,本发明的调料中还加入了红酒,红酒中的单宁具有去腻的功效,且加入红酒能使牛排香味更浓、风味更佳;
(3)本发明对腌制好的牛排进行超高压处理,一方面能够对牛排进行杀菌,提高其保质期,另一方面,超高压处理还大大提高了牛排的嫩滑程度,使得制得的牛排肉质细嫩,且更容易被人体消化吸收。

S16:超高压处理:将所述S15预冻处理后的牛肉进行超高压处理超高压处理的条件为:200MPa条件下保压5min,升压速度为在20s内完成升压;
S17:包装入库:将S16超高压处理后的牛肉进行外包装,然后喷印生产日期后装箱入库。
实施例2
本发明提出的保健牛排及其制备方法,所述牛排腌制的调料包含如下重量份计的原料:纳豆酱60份、山药粉15份、黄芪提取物10份、枸杞粉7份、蛹虫草份5份、松针提取物5份、姜黄素3份、β-谷甾醇2份、豆甾醇3份、茶油10份、红酒15份、黑胡椒粉5份、香辛料4份、大蒜4份。

S23:充填滚揉:将调料与冰水混合后,调料与冰水的质量比为20:100,所述冰水温度6℃,通过注射机将混合液注射到所述S22排酸后的牛肉中,混合液按10ml/kg进行注射,轻轻拍打4min后,将处理后的牛肉放入滚揉机中滚揉6min;
S24:切片腌制:将所述S23滚揉后的牛肉进行切片,每片牛肉的厚度为15mm,重量为160g/片,然后再在牛肉表面刷一层S23所述的混合液,继续滚揉4min,然后静置8h进行腌制,滚揉为真空滚揉,其条件为:真空度为-0.08MPa、滚揉速度10r/min、环境温度15℃;
S25:预冻:将S24中滚揉腌制好的牛肉先进行真空包装,然后再将真空包装后的牛肉放入冷冻室进行预冻处理,预冻处理后牛肉中心温度为-20℃;
S26:超高压处理:将所述S25预冻处理后的牛肉进行超高压处理,超高压处理的条件为:300MPa条件下保压15min,升压速度为在30s内完成升压;

S17:包装入库:将S16超高压处理后的牛肉进行外包装,然后喷印生产日期后装箱入库。

10.根据权利要求5所述的保健牛排的制备方法,其特征在于,所述S23中调料与冰水的质量比为10-20:100,所述冰水温度2-6℃,所述混合液按5-10ml/kg进行注射。
