Abstract
本发明公开了一种多肽醋蛋液及其制备方法,由以下原料制成:醋、蜂蜜、鸡蛋、鹌鹑蛋、多肽溶液以及中药辅料组成;其特征在于,所述多肽溶液包含苦瓜肽、大豆肽和小麦肽;所述中药辅料:大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁和茯苓。与现有技术相比,本发明的技术效果是各组分相互协同、相互作用的结果,并非简单的原料功能的叠加,各原料组分的科学复配和提取,产生的效果远远超过各单一组份功能和效果的叠加,具有较好的先进性和实用性。另外,本发明的配伍全部采用食材和天然植物提取物,因此可以长期服用,没有副作用,有利于消费者美容养眼、健康、延寿。

本发明涉及食品加工技术领域,更具体的说是涉及一种多肽醋蛋液及其制备方法。
背景技术
随着经济的快速发展,人们的生活质量有了大幅度提升,使人们有了更多种的消费方式。人们再也不是只追求食品的色彩和味道,而是更倾向于其营养价值和健康饮食。当前,“少盐多醋”的饮食方式被人们广泛推崇。醋是世界上重要的传统调味品,在东西方饮食中扮演重要角色。各种有机酸中醋酸为其重要组成部分。有机酸的种类和含量的差异决定了醋的风味,使醋酸味道变得复杂,分别给予不同种类的醋不一样的口感,使醋在菜肴烹饪中不只是调整酸度,而且醋中含有多种营养成分,如赖氨酸、β-葡萄糖、乳酸、VB及多种无机盐等,具有良好的保健功能和医疗功能。而且鸡蛋有很高的营养价值,是优质蛋白质、B族维生素的良好来源,还能提供一定数量的脂肪、维生素A和矿物质。把醋和鸡蛋浸泡后形成醋蛋液,不但具有鸡蛋和醋的全部营养价值,而且相互作用后,其营养价值优劣互补,使其更易被吸收。它们是一种蛋白质含量高,脂肪、胆固醇含量低的食品,更适合心血管病人,其原因在于:在用醋处理鸡蛋液之后,醋激活蛋中的胆固醇氧化酶和胆固醇还原酶激活,这两种酶能将体内的胆固醇降解,显著降低鸡蛋中胆固醇含量。醋蛋液所富含的营养成分,加速身体细胞生长、分化,使血管软化,加快身体血液流动,使身体最基本的物质代谢的正常运作速度加快,提高机体免疫力和机体抵抗疾病的功能,可以认为醋蛋液是一种延缓衰老,延长寿命的健康饮品。机体更易吸收两者中的营养素,食疗作用极具增大,能够极大地满足人们“少盐多醋”的饮食方式。
醋蛋液作为中国民间传统的食疗饮品,其营养价值和其食疗功效受到广泛的认可,但由于传统的方法所制作出来的醋蛋液,其产品过于单一,质量难于控制,加工方法不适宜大规模的工业化生产。其加工工艺过于简单,大部分传统的醋蛋产品采用的是食用醋,醋的酸度高,导致最终产品中不仅保留着原有的醋酸异感,还有较重的腥味,导致整体风味差、对喉咙和胃都带来了极大的刺激,不易被人群普遍接受。传统的醋蛋饮料中仅用蛋醋混合制成醋蛋液,仅用醋对鸡蛋中的蛋白质的有限水解作用,多肽和氨基酸的产生不足,导致醋蛋液的营养价值不高。
发明内容
有鉴于此,本发明提供了一种具有口感好、营养价值高、补益气血、美容养颜、降血糖等功效的多肽醋蛋液及其制备方法。
为实现上述目的,本发明提供如下技术方案:
一种多肽醋蛋液,由以下原料制成:醋、蜂蜜、鸡蛋、鹌鹑蛋、多肽溶液以及中药辅料组成;其特征在于,所述多肽溶液包含苦瓜肽、大豆肽和小麦肽;所述中药辅料:大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁和茯苓。
优选的,在上述一种多肽醋蛋液及其制备方法中,所述原料由以下重量份制成:醋100~150份、蜂蜜70~100份、鸡蛋30~50份、鹌鹑蛋20~40份、所述多肽溶液50-100份;所述中药辅料20-40份。
优选的,在上述一种多肽醋蛋液及其制备方法中,所述多肽溶液中苦瓜肽∶大豆肽∶小麦肽=1∶1∶2。
优选的,在上述一种多肽醋蛋液及其制备方法中,所述中药辅料中大枣∶桂圆∶枸杞∶桑葚∶黄精∶黄芪∶葛根∶益智仁∶茯苓=1∶1∶1∶1∶1∶1∶1∶1∶1。
优选的,在上述一种多肽醋蛋液及其制备方法中,包括以下步骤:
(1)制备醋蛋液:将鸡蛋、鹌鹑蛋清洗干净,灭菌杀毒后浸泡到醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,直至鸡蛋的蛋壳、蛋膜衣、蛋白和蛋黄醋化,形成醋蛋液后,浸泡结束,然后进行搅拌均匀后向其中添加蜂蜜搅拌均匀后过滤获得醋蛋液;
(2)制备中药液:将大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁和茯苓分别加入醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,浸泡结束后搅拌、过滤、混合获得中药溶液;
(3)制备多肽醋蛋液:将醋蛋液、中药液以及多肽溶液按照一定比例混合,搅拌均匀后制成多肽醋蛋液。
本发明中各成分的作用原理:
醋有开胃、养肝、散瘀、止痛的功效。功能主治:散瘀,止血,解毒,杀虫。治产后血晕,痃癖症瘕,黄疸,黄汗,吐血,衄血,大便下血,***瘙痒,痈疽疮肿,解鱼肉菜毒。还具有杀虫作用和抗菌、抗病毒作用,乙酸对甲型链球菌、卡他球菌、肺炎链球菌、白色葡萄球菌、流感病毒的多种致病菌,有很好的抑菌和杀菌作用。
蜂蜜可以替换为蔗糖、葡萄糖、果糖或木糖醇,但优选使用蜂蜜。区别于其他成分,蜂蜜味甘,性平,可补中、润燥、止痛、解毒。三者合用,可以滋阴养肝、补中开胃。
大枣,即红枣,甘,温。归脾、胃经。保留枣核、枣皮,全果入药,功能主治:补脾和胃,补中益气,养血安神,解药毒。用于气血津液不足,脾虚食少,乏力便溏,心悸怔忡,妇人脏躁。
桂圆,去果皮保留果肉和果核入药。甘、平温、无毒。入心、脾、胃。功能主治:补心脾,益气血,健脾胃,养肌肉。思虑伤脾,头昏,失眠,心悸怔忡,虚赢,病后或产后体虚,及由于脾虚所致之下血失血症。止血止痛。用于胃痛,烧烫伤,刀伤出血,疝气痛。桂圆含丰富的葡萄糖、蔗糖和蛋白质,含铁量也比较高,可在提高热能、补充营养的同时促进血红蛋白再生,从而达到补血的效果。研究发现,龙眼肉除了对全身有补益作用外,对脑细胞特别有效,能增强记忆,消除疲劳。
枸杞,甘,平。归肝、肾经。功能主治:滋补肝肾,益精明目。用于虚劳精亏,腰膝酸痛,眩晕耳鸣,内热消渴,血虚萎黄,目昏不明。枸杞中含有丰富的胡萝卜素、多种维生素和钙、铁等健康眼睛的必需营养物质,故有明目之功。枸杞子富含枸杞多糖,枸杞多糖是一种水溶性多糖,由***糖、葡萄糖、半乳糖、甘露糖、木糖、鼠李糖这6种单糖成分组成,具有生理活性,能够增强非特异性免疫功能,提高抗病能力,抑制肿瘤生长和细胞突变。
苦瓜肽,是从新鲜的专用苦瓜籽胚芽中提炼出来的生物活性成分,由17种166个氨基酸组成,与胰岛素有相似的结构和理化指标,具有显著的调节血糖效果。
大豆肽,大豆肽是将大分子的大豆蛋白质,利用生物技术酶成由2到10个氨基酸组成的小分子片段。大豆肽富含22种氨基酸,其中包含9种人体不能合成的必需氨基酸。大豆肽为小分子的蛋白质,非常容易被人体吸收,适合蛋白质消化吸收不佳的人群食用,如中老年人、手术后恢复期病人、肿瘤及放化疗病人、胃肠功能不佳者等。此外,大豆肽还具有提高免疫力、增强体力、缓解疲劳、降三高等功效。此外,大豆肽还具有无豆腥味、无蛋白变性、酸性不沉淀、加热不凝固、易溶于水、流动性好等良好的加工性能,是优良的保健食品配料。
小麦肽以小麦谷朊粉为原料,经调浆、蛋白酶酶解、分离、过滤、喷雾干燥等工艺制成。具有以下功效:有抑制胆固醇上升的作用。小麦肽能促进胰岛素分泌作用,其功能物质是低聚蛋氨酸,可用于调节人的血糖,改善糖尿病症状。小麦肽能阻碍血管紧张素酶的作用,因而有降血压作用。小麦肽的特点之一是含高谷酰胺,能够有效调节神经,也可作肠功能障碍时的特殊营养物质。具有ACE抑制作用、免疫调节、抗氧化等多种生物活性,能够刺激机体淋巴细胞增殖,增强巨噬细胞吞噬功能,提高机体抵御外界病原体感染的能力,降低机体发病率等。小麦肽是小麦蛋白酶解产物,能抑制血管紧张素转化酶的活性,使血管紧张素原不能转变成能使血压升高的血管紧张素II,从而生理地降低血压,而对正常血压不起用。
桑椹是桑科桑属多年生木本植物桑树的果实,具有防止血管硬化、健脾胃,助消化、补充营养、乌发美容、防癌抗癌、治疗贫血等功效。
黄精(学名:Polygonatum sibiricum),又名:鸡头黄精、黄鸡菜、笔管菜、爪子参、老虎姜、鸡爪参。为黄精属植物,根茎横走,圆柱状,结节膨大。叶轮生,无柄。药用植物,具有补脾,润肺生津的作用。
黄芪,味甘,性微温,具补气固表、利尿、强心、降压、抗菌、托毒、排脓、生肌、加强毛细血管抵抗力、止汗和类性激素的功效,治表虚自汗、气虚内伤、脾虚泄泻、浮肿及痈疽等。
葛根,中药名。为豆科植物野葛的干燥根,习称野葛。秋、冬二季采挖,趁鲜切成厚片或小块;干燥。甘、辛,凉。有解肌退热,透疹,生津止渴,升阳止泻之功。常用于表证发热,项背强痛,麻疹不透,热病口渴,阴虚消渴,热泻热痢,脾虚泄泻。
益智仁,中药名。为姜科植物益智Alpinia oxyphylla Miq.的果实。分布于广东和海南,福建、广西、云南亦有栽培。具有温脾止泻摄涎,暖肾缩尿固精之功效。常用于脾胃虚寒,呕吐,泄泻,腹中冷痛,口多唾涎,肾虚遗尿,尿频,遗精,白浊。
茯苓,味甘、淡,性平。具有利水渗湿,健脾,宁心等功效。
经由上述的技术方案可知,与现有技术相比,本发明的技术效果是各组分相互协同、相互作用的结果,并非简单的原料功能的叠加,各原料组分的科学复配和提取,产生的效果远远超过各单一组份功能和效果的叠加,具有较好的先进性和实用性。另外,本发明的配伍全部采用食材和天然植物提取物,因此可以长期服用,没有副作用,有利于消费者美容养眼、健康、延寿。

下面将结合本发明实施例,对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
实施例1:
按照下列质量比选取原料:醋110份、蜂蜜80份、鸡蛋35份、鹌鹑蛋30份、所述多肽溶液60份,其中,苦瓜肽15份,大豆肽15份,小麦肽30份;所述中药辅料27份;其中,大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁、茯苓各3份。
(1)制备醋蛋液:将上述鸡蛋、鹌鹑蛋清洗干净,灭菌杀毒后浸泡到醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,直至鸡蛋的蛋壳、蛋膜衣、蛋白和蛋黄醋化,形成醋蛋液后,浸泡结束,然后进行搅拌均匀后向其中添加蜂蜜搅拌均匀后过滤获得醋蛋液;
(2)制备中药液:将大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁和茯苓分别加入醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,浸泡结束后搅拌、过滤、混合获得中药溶液;
(3)制备多肽醋蛋液:将醋蛋液、中药液以及多肽溶液按照一定比例混合,搅拌均匀后制成多肽醋蛋液。
实施例2:
按照下列质量比选取原料:醋140份、蜂蜜70份、鸡蛋50份、鹌鹑蛋20份、所述多肽溶液80份,其中,苦瓜肽20份,大豆肽20份,小麦肽40份;所述中药辅料36份;其中,大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁、茯苓各4份。
(1)制备醋蛋液:将上述鸡蛋、鹌鹑蛋清洗干净,灭菌杀毒后浸泡到醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,直至鸡蛋的蛋壳、蛋膜衣、蛋白和蛋黄醋化,形成醋蛋液后,浸泡结束,然后进行搅拌均匀后向其中添加蜂蜜搅拌均匀后过滤获得醋蛋液;
(2)制备中药液:将大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁和茯苓分别加入醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,浸泡结束后搅拌、过滤、混合获得中药溶液;
(3)制备多肽醋蛋液:将醋蛋液、中药液以及多肽溶液按照一定比例混合,搅拌均匀后制成多肽醋蛋液。

Claims (5)
1.一种多肽醋蛋液,由以下原料制成:醋、蜂蜜、鸡蛋、鹌鹑蛋、多肽溶液以及中药辅料组成;其特征在于,所述多肽溶液包含苦瓜肽、大豆肽和小麦肽;所述中药辅料:大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁和茯苓。
2.根据权利要求1所述的一种多肽醋蛋液,其特征在于,所述原料由以下重量份制成:醋100~150份、蜂蜜70~100份、鸡蛋30~50份、鹌鹑蛋20~40份、所述多肽溶液50-100份;所述中药辅料20-40份。
3.根据权利要求2所述的一种多肽醋蛋液,其特征在于,所述多肽溶液中苦瓜肽∶大豆肽∶小麦肽=1∶1∶2。
4.根据权利要求2所述的一种多肽醋蛋液,其特征在于,所述中药辅料中大枣∶桂圆∶枸杞∶桑葚∶黄精∶黄芪∶葛根∶益智仁∶茯苓=1∶1∶1∶1∶1∶1∶1∶1∶1。
5.根据权利要求1-4中任意一项所述的一种多肽醋蛋液的制备方法,其特征在于,包括以下步骤:
(1)制备醋蛋液:将鸡蛋、鹌鹑蛋清洗干净,灭菌杀毒后浸泡到醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,直至鸡蛋的蛋壳、蛋膜衣、蛋白和蛋黄醋化,形成醋蛋液后,浸泡结束,然后进行搅拌均匀后向其中添加蜂蜜搅拌均匀后过滤获得醋蛋液;
(2)制备中药液:将大枣、桂圆、枸杞、桑葚、黄精、黄芪、葛根、益智仁和茯苓分别加入醋中浸泡,浸泡时间5~6天,浸泡温度25~30℃,浸泡结束后搅拌、过滤、混合获得中药溶液;
(3)制备多肽醋蛋液:将醋蛋液、中药液以及多肽溶液按照一定比例混合,搅拌均匀后制成多肽醋蛋液。
