Description
Technical Field
The invention belongs to the field of cassava processing methods.
Background
The cassava starch is powder obtained by extracting cassava starch and then dehydrating and drying. The cassava starch comprises two main types of native starch and various modified starches, and is widely applied to food industry and non-food industry. The modified starch may be tailored to suit the particular application as dictated by the user. The traditional cassava flour processing technology comprises the following steps: cassava-cleaning-crushing-starch extracting-slag-pulp separating-fine filtering and sand removing-juice removing-concentrating and refining-dehydrating-drying. The cassava flour prepared by the process is raw flour, and can be eaten only by further cooking when in use.
Disclosure of Invention
The invention aims to solve the technical problem of providing a processing method of cooked cassava flour.
In order to achieve the purpose, the technical scheme adopted by the invention is as follows:
a cassava flour processing method comprises the steps of raw material receiving and impurity removal, raw material cleaning and peeling, crushing and sand removal, dehydration, drying and packaging, wherein a curing process is arranged after the dehydration process, and the curing process comprises the step of frying dehydrated cassava flour to cure.
The method also comprises a squeezing dehydration fermentation process, wherein the cassava pulp slurry is dehydrated and squeezed by a filter press after crushing and desanding of cassava raw materials, filter cakes are formed after dehydration, and the filter cakes are conveyed into corresponding fermentation tanks by a material separating belt conveyor for fermentation.
After fermentation, the filter cake is crushed and broken into powder by a crusher and then conveyed to a corresponding frying pan by a material separating belt for frying.
The procedure of cleaning and peeling the raw materials comprises the following steps:
cleaning by a paddle cleaning machine, feeding the raw materials subjected to dry impurity removal into a group of two-stage series paddle cleaning machines, adding water into cassava for cleaning, and removing residual sand grains and broken peels;
the brush is used for cleaning the peeling machine to remove the cassava skins and impurities difficult to remove.
And the cassava raw material after being cleaned by the brush is conveyed to the roller spray cleaning machine through a belt conveyor for further cleaning, and the surface of the material is cleaned by spraying impurities such as epidermis, silt and the like.
The crushing and desanding process comprises the following steps:
primarily crushing, conveying the cassava raw materials after complete cleaning into a crusher to be cut into fragments with the size of about 10mm, and then conveying the crushed cassava blocks into a crusher to further crush the cassava;
filing and pulping, wherein the cassava blocks are filed and ground into potato pulp by a crusher, and the potato pulp comprises free starch particles, fibers containing combined starch and cell sap; the grated potato pulp enters a gathering tank through a screen below the grater, flows into a potato pulp barrel and is conveyed to a sand remover;
and (3) cyclone desanding, namely removing small sand grains and heavy impurities in the cassava pulp through a desander, and conveying the desanded cassava pulp to a cassava pulp temporary storage tank through a cassava pulp conveying pump.
And process water is required to be added in the filing process to dilute the grinding fluid.
A slurry pump is arranged at the bottom of the cassava pulp barrel, and cassava pulp is pumped into a desander through the slurry pump to desand the cassava pulp.
The process comprises the steps of conveying the fried whole flour to a classifying screen through a screw conveyor for screening, and crushing large-particle powder of oversize materials and then returning to continue screening.
The invention has the beneficial effects that: after the cassava flour is subjected to the curing process, the cassava flour can be eaten only by slightly heating when being used, and the human body cannot be injured.

FIG. 1 is a process flow diagram of the present invention.
Detailed Description
The present invention will be further described with reference to the following examples.
The cassava flour processing method shown in figure 1 comprises the following steps:
raw material receiving and impurity removing
A dry type impurity removing machine: the fresh cassava raw materials after receiving are conveyed to a factory raw material yard through a truck with the load of about 5-10 tons, the cassava raw materials are conveyed to a raw material receiving bin through a forklift or manually, are discharged to a belt conveyor through a vibration discharger and are conveyed to a drum-type impurity removing machine through a belt, preliminary dry impurity removal is carried out, and impurities such as sandy soil, roots, straws, barks and the like in the cassava raw materials are removed.
Cleaning and peeling raw materials
A paddle cleaning machine: and (3) feeding the raw materials subjected to dry impurity removal into a group of two-stage series paddle type cleaning machines, adding water into cassava, cleaning, removing residual sand grains and broken peels, and ensuring that the raw materials fed into a rasping section are clean. The front part of the cleaning machine is mainly used for fully soaking the raw materials, so that the cassava is removed through mutual friction stirring and the like. The raw materials are conveyed into a next-stage cleaner water tank through the water tanks in different areas in a first-stage and first-stage manner, clean cleaning water is added into a subsequent cleaning machine, and thus cassava is cleaned in a countercurrent cleaning manner.
Cleaning and peeling machine of the brush: in order to ensure that impurities on the surface of the raw material are cleaned as clean as possible, a brush cleaning and peeling machine is additionally arranged to clean the surface of the cassava and the impurities which are difficult to remove.
The roller sprays the cleaning machine: the cassava raw materials cleaned by the brush are conveyed to a roller spray cleaning machine through a belt conveyor for further cleaning, impurities such as skins and silt doped on the surfaces of the materials are cleaned through spraying as much as possible, and the clean materials are conveyed to a crushing unit through the belt conveyor.
Crushing and desanding
Primary crushing: because the cassava tubers are large, the cassava tubers need to be primarily crushed before being crushed, the completely cleaned cassava raw materials are conveyed into a crusher to be cut into fragments with the size of about 10mm, and the crushed cassava blocks enter the crusher to be further crushed.
Pulping by filing: the disintegrator file-grinds the cassava blocks into potato pulp, which includes free starch particles, fibers containing bound starch, and cellular fluids (soluble matter including protein, sugar, and minerals). And process water is required to be added in the filing process to dilute the grinding fluid. The grated potato pulp enters a gathering groove through a screen below the grater and flows into a potato pulp barrel. A slurry pump is arranged at the bottom of the cassava pulp barrel, and cassava pulp is pumped into a desander through the slurry pump to desand the cassava pulp.
Cyclone desanding: removing small sand grains and heavy impurities in the cassava pulp through a desander, ensuring the quality of finished products, and conveying the desanded cassava pulp to a cassava pulp temporary storage tank through a cassava pulp conveying pump.
Squeezing, dewatering and fermenting
And (3) dehydrating and fermenting: and (3) conveying the slurry in the temporary storage tank of the potato pulp to a plate-and-frame filter press through a feeding screw pump for dewatering and squeezing, and conveying the dewatered filter cake to a corresponding fermentation tank through a material separating belt conveyor for fermentation.
Crushing a filter cake: the fermented filter cake is crushed and broken into powder by a crusher and then is conveyed to a corresponding frying pan by a material separating belt for frying.
Stir-fry package
Frying and curing: the crushed filter cake is fried by a special drum type frying pan conveyed by a material separating belt.
Screening the whole powder: conveying the fried whole flour to a classifying screen through a screw conveyor for screening, and crushing large-particle powder on the screen and returning to continue screening.
Packaging the whole powder: the whole powder screened by the classifying screen enters a finished product bin, is measured by a vibrating discharger and an electronic scale and then enters a packaging machine for packaging.
The foregoing shows and describes the general principles, essential features, and advantages of the invention. It will be understood by those skilled in the art that the present invention is not limited to the embodiments described above, which are described in the specification and illustrated only to explain the principles of the invention, and that various modifications and alterations can be made by those skilled in the art without departing from the spirit and scope of the invention.
