Abstract

本发明涉及一种果蔬保鲜贮藏的方法,由如下的步骤完成:(1)选用通风避光、无鼠害的房间作为贮藏室;(2)使用前用1.5%漂白粉溶液喷洒贮藏室杀菌,在果蔬贮藏过程中,对贮藏室定期进行杀菌处理;(3)贮藏室的地面撒适量的石灰;(4)在贮藏室中制作相应数量的用于码放果蔬的花架;(5)按每公斤果蔬5克保鲜剂的比例制得保鲜剂,并将保鲜剂盛放于塑料或瓷制容器中,均匀分布放置在贮藏室的底部;在贮藏室的上部安装一台臭氧发生机,要求臭氧浓度为每立方米6毫克,臭氧发生机每天开机时间为2—3小时;(6)定期开窗通风1~2小时,夏季通风时间选择晚上,冬季选择中午即可。与传统方法相比,其保鲜期可延长1倍以上,不会对果蔬表皮造成任何不良影响。

一种果蔬保鲜贮藏的方法
技术领域
本发明涉及果蔬保鲜领域,具体涉及一种果蔬保鲜贮藏的方法。
背景技术
采后果蔬的一般贮藏保鲜处理流程为:水清洗(常在水中加入含氯消毒剂,如次氯酸钠、次氯酸钙、二氧化氯、三氯异氰尿酸等)→杀菌保鲜处理(常采用化学合成的农药类杀菌剂浸泡防腐,如咪鲜胺、抑霉唑、扑海因、特克多、多菌灵等)→塑料薄膜/袋包装保湿→入冷库贮藏(库中一般无湿度控制)。
采用上述贮藏保鲜处理流程对采后果蔬进行处理存在以下缺陷:
(一 )、采用含氯消毒剂及化学合成农药类杀菌保鲜剂清洗浸泡处理过程中存在刺 激性异味,且可在果蔬中造成残留,食用后易对人体产生毒害作用,并会污染水源,给食品 安全和环保问题造成潜在危害。化学合成农药类杀菌保鲜剂在欧美发达国家已被禁止应用于果蔬的采后保鲜处理,并且长期使用已使很多病原菌对其产生了抗药性;
(二 )、用于包装保湿的一次性塑料薄膜/袋的质量参差不齐,多数不符合食品安全 级别,且极大量一次性塑料薄膜袋的使用给后续的废弃处理带来困难,对食品安全和环保 问题造成安全隐患;另外,塑料薄膜袋包装在低温下易结露凝水造成病原菌二次污染,且透气性不好易使果蔬变质变味。
发明内容
综上所述,为克服现有技术的不足,本发明所要解决的技术问题是提供一种果蔬保鲜贮藏的方法。
本发明解决上述技术问题的技术方案如下:一种果蔬保鲜贮藏的方法,由如下的步骤完成:
(1)选用通风避光、无鼠害的房间作为贮藏室;
(2)使用前用1.5%漂白粉溶液喷洒贮藏室杀菌,在果蔬贮藏过程中,对贮藏室定期进行杀菌处理;
(3)贮藏室的地面撒适量的石灰;
(4)在贮藏室中制作相应数量的用于码放果蔬的花架;
(5)按每公斤果蔬5克保鲜剂的比例制得保鲜剂,并将保鲜剂盛放于塑料或瓷制容器中,均匀分布放置在贮藏室的底部;在贮藏室的上部安装一台臭氧发生机,要求臭氧浓度为每立方米6毫克,臭氧发生机每天开机时间为2—3小时;
(6)定期开窗通风1~2小时,夏季通风时间选择晚上,冬季选择中午即可。
在上述技术方案的基础上,本发明还可以做如下改进:
进一步,贮藏室为土质地面。
进一步,步骤(2)中的杀菌液选用高锰酸钾溶液或漂白粉溶液。
本发明的有益效果是:与传统方法相比,其保鲜期可延长1倍以上,不会对果蔬表皮造成任何不良影响。 采用本发明的方法无需使用保鲜袋或者保鲜膜包装果蔬,避免了二次污染,并节省大量一次性塑料包装的材料及人力成本。
具体实施方式
以下结合具体实例对本发明的原理和特征进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
一种果蔬保鲜贮藏的方法,由如下的步骤完成:
(1)选用通风避光、无鼠害的房间;贮藏室以土质地面为好,这样可保持较高的相对湿度(一般果蔬贮藏要求的湿度为80—95%。柑桔果品贮藏的相对湿度小些,可用湿度计检测),否则只有靠人工喷水,费时费力。
(2)使用前房间或地窖四壁用1.5%漂白粉溶液喷洒杀菌。也可喷洒0.3%过氧乙酸菌液。另外,在果蔬贮藏过程中,对贮藏室定期进行杀菌处理。杀菌液可选用高锰酸钾溶液或漂白粉溶液;
(3)贮藏室的地面撒适量的石灰。
(4)在贮藏室中制作相应数量的用于码放果蔬的花架。果蔬可直接堆放也可用筐或透气性袋包装后码放在花架上;
(5)为将果蔬呼吸释放的乙烯气体氧化去除,可采用两种方法(任选一种),一是氧化剂法:即将配制好的氧化保鲜剂,按每公斤果蔬5克保鲜剂(干计)比例盛放于塑料或瓷制容器中,均匀分布放置在贮藏房间或地窖的底部。二是臭氧发生机氧化法:即在房间或地窖的上部安装一台臭氧发生机,要求臭氧浓度为每立方米6毫克(注意:当臭氧浓度超过2毫克/每立方米时,人长时间在室内呼吸对人体有害,操作时要特别注意),臭氧发生机的型号依房间大小而定。臭氧发生机每天开机时间为2—3小时;
(6)为防止贮存果蔬表面“发汗”,定期开窗通风1~2小时,夏季通风时间选择晚上,冬季选择中午。

1.一种果蔬保鲜贮藏的方法,其特征在于,由如下的步骤完成:
(1)选用通风避光、无鼠害的房间作为贮藏室;
(2)使用前用1.5%漂白粉溶液喷洒贮藏室杀菌,在果蔬贮藏过程中,对贮藏室定期进行杀菌处理;
(3)贮藏室的地面撒适量的石灰;
(4)在贮藏室中制作相应数量的用于码放果蔬的花架;
(5)按每公斤果蔬5克保鲜剂的比例制得保鲜剂,并将保鲜剂盛放于塑料或瓷制容器中,均匀分布放置在贮藏室的底部;在贮藏室的上部安装一台臭氧发生机,要求臭氧浓度为每立方米6毫克,臭氧发生机每天开机时间为2—3小时;
(6)定期开窗通风1~2小时,夏季通风时间选择晚上,冬季选择中午即可。
