step S006, heating and cooking the content in the cooking box by utilizing a microwave cooking device so as to enable rice and coarse cereals in the cooking box to be evenly cured through boiling nutrient solution in the cooking box, actively discharging steam after the rice and the coarse cereals in the cooking box are evenly cured so as to accelerate the nutrient solution in the cooking box to emit, wherein the power of the microwave cooking device is 80kW, and the microwave curing time is 10-30 minutes.
When the miscellaneous grain rice is heated in the microwave cooking device 50, the water in the cooking box is boiled, so that the rice grains are turned over in the cooking box, and as the heating process is carried out, the volume of the rice grains is increased, the water in the cooking box is reduced, the viscosity of the rice grains is increased, so that the turning-over degree of the rice grains is reduced, and the rice grains are not turned over. In the process of turning over, adhesion is not easy to occur among rice grains, so that the viscosity of the rice is reduced, and meanwhile, the rice is heated, puffed and water content is uniform in the process of turning over, so that the taste of the rice is easy to keep consistent.

and S008, arranging the semi-finished product cooking box in a secondary curing sterilizing device in a mode that the box bottom is upward and the sealing film is downward, and performing high-temperature sterilization and secondary curing on cured rice and minor cereals in the semi-finished product cooking box so that a small amount of collected nutrient solution positioned at the box bottom is vaporized in the process of approaching the sealing film by self gravity and then is diffused upward to promote loosening of rice and minor cereal grains positioned at the box bottom, wherein the heating temperature is 115-121 ℃, the heating time is 10-30 min, and the weight water content of rice is 62-65%.
After preliminary cooking of the rice by the microwave cooking device 50, a small amount of water is still present at the bottom of the cooking box, and in the process of cooking, the rice at the upper end is loose due to the reasons of moisture, pressure, steam and the like in the self-heating cooking box, while the rice at the lower end is compact in internal structure and high in viscosity due to the influence of the factors of moisture, pressure, steam and the like. Thus, the upper taste and the lower taste of the coarse cereal rice are inconsistent, and the problem of retrogradation can occur. The self-heating steaming box is turned over before secondary heating, so that the bottom of the self-heating steaming box is upward, and the top of the self-heating steaming box is downward, and redundant water is transferred from the bottom of the self-heating steaming box to the top of the self-heating steaming box, so that the water distribution of the steaming box is uniform. In the process of secondary heating of the rice, hot steam can further and evenly enter the rice, the rice is further cured, and the rice is further fluffy under the action of the hot steam. Since the rice at the bottom of the self-heating steaming box is positioned at the upper part of the whole rice, the pressure applied to the rice is smaller and the moisture is less, so that the rice is easier to be fluffy. Thus, the overall properties of the rice, such as fluffiness, water content, volume, viscosity and the like, tend to be consistent, so that the overall taste of the rice is relatively consistent. At the same time, the free water between the grains is further reduced, so that the viscosity between the grains is reduced.
In general, when making coarse cereal rice, the problems of bad taste and retrogradation of the rice are caused by factors such as the water content of the rice, the cooking time, the cooking temperature, the water content after cooking, and the like during the soaking. According to the invention, aiming at the problem that rice is easy to generate retrogradation, the problems of retrogradation and different hardness of coarse cereal rice prepared by rice are avoided by controlling the water content of the rice in the soaking process, improving the primary curing and secondary curing processes and controlling the setting of the technological parameters of the primary curing and secondary curing processes through multiple tests, and meanwhile, the mouthfeel is good.
